Does anyone have a recipe for sweet potato oatmeal cookies?

I went to the farmer's market last week and the organic sweet potato farmers were selling the most moist and delicious cookies: oatmeal raisin sweet potato. My google-fu has failed me here. Any ideas?

i have recipe for sweet potato with raisin cookies, perhaps you could substitute oatmeal for some of the flour? this was the closest thing i could come up with!











SWEET POTATO COOKIES

3/4 c. fat


1-1/4 c. sugar


2 eggs, beaten


2 c. cooked, mashed sweet potatoes


1 tsp. vanilla


2 c. Flour


4 tsp. baking powder


1 tsp. cinnamon


1 tsp. cloves


1/2 tsp. nutmeg


1/2 c. chopped nuts


1/2 c. raisins, chopped








Beat fat. Add sugar and cream well. Add eggs and beat until smooth. Stir in mashed potatoes (no lumps) and vanilla. Sift dry ingredients together and combine with nuts and raisins. Add to potato mixture. Drop by tiny spoonfuls onto a greased baking sheet. Bake at 350 degrees for 10- 20 minutes.











Does anyone have a recipe for sweet potato oatmeal cookies?
I have a recipe for sweet potato biscuits that is just awesome. After 2 or 3 days (if they last that long) they were still so extra moist. This question caught my eye and if you get a good recipe would you please send me a recipe.





Okay I was thinking about this question and remembered a banana oatmeal cookie recipe that I made last week. Sweet potatoes should work just as well. Here is the recipe modified for sweet potatoes:





3/4 cup shortening


1 cup brown sugar


1/2 cup white sugar


1 egg


1 tsp vanilla


1 cup cooked/cooled mashed sweet potato


1 cup all purpose flour


1 tsp baking soda


1 tsp salt


1 tsp cinnamon


1/2 tsp cloves


1 cup raisens


1 cup choped nuts


2 1/4 cups quick cooking oats





Heat oven to 350. Cream the sugars, shortening, egg, vanilla and sweet potatoes. Stir in remaining ingredients.





Drop by rounded spoon full 1 in apart onto greased baking sheet. Bake 10-12 min. Remove from sheet right away, and cool.





I have only tried the banana version and they were good but very dense cookies so I have changed it a little bit so that they aren't such a big thick cookie. You may have to work with it a bit.
