I am looking for a sweet potato salad recipe, does anyone know of one they would like to share?

Try this one its a favorite in our house!





SWEET POTATO SALAD





6 med. sweet potatoes, peeled


1 (8 oz.) can pineapple chunks, drained


1/2 c. sliced celery


1/2 c. chopped pecans


1 c. mayonnaise or salad dressing (Miracle Whip)


1/4 c. sour cream





In large saucepan cook sweet potatoes in boiling water for 25-30 minutes, or until tender. Let cool, then cut into 3/4 inch cubes. In a large bowl, combine sweet potatoes, pineapple, celery, and pecans. Combine mayonnaise or salad dressing and the sour cream. Fold into salad. Chill if desired. Sweet Potato Salad





Ingredients


3 Large sweet potatoes, peeled and diced


1/2 cup Hazelnut oil, olive oil or vegetable spray


1/2 Large red onion diced


1 stalk Celery, diced


1/2 cup Chopped hazelnuts, toasted and chopped


3/4 cup Fresh parsley, chopped


1 cup Orange juice





Preparation


In a large zip lock bag add potatoes, and oil. Coat potatoes with oil. Spread out on a baking sheet. Bake at 400 degrees for 20 minutes or until tender. Transfer potatoes to a serving bowl and add onion, celery, nuts, parsley, and orange juice. GRILLED SWEET POTATO AND MANGO SALAD





1 sweet potato, peeled


1 large mango, skin removed








For the dressing:





3 Tbsp olive oil


4 Tbsp fresh mint, chopped


Juice of 1 lime


1 tsp grated lime rind


1 Tbsp rice wine vinegar


陆 tsp extra-fine sugar


Sea salt and pepper, to taste

1 head Bibb or Boston (round) lettuce


陆 cup (10g) fresh mint





Preheat the grill or grill pan to medium.


Chop both the sweet potato and mango flesh into long wedges, about 戮-in (2cm) wide, 陆-in (1 cm) thick. Place in separate dishes.





Combine the dressing ingredients in a small bowl and pour half over the mango and potato.





With tongs in hand, arrange sweet potato wedges directly over the grill and leave for 6-8 minutes, until grill marks appear and the bottom sides begin to soften. Turn and grill the other side for a further 6 minutes. While the other sides are cooking, arrange the mango wedges directly on the grill. Grill for about 2-3 minutes on each side. Transfer all the wedges to a cutting board and cut into cubes. Place them in a bowl and toss with the remaining dressing.





Arrange lettuce leaves on salad plates. Scatter the sweet potato and mango over the lettuce and add a sprinkling of sea salt and finely sliced mint.

1. In a medium saucepan, cook sweet potatoes in boiling salted water, until firm-tender, watch closely, (don't overcook as they will be mushy) cook about 5-6 minutes.


2. Drain well; toss with lemon juice.


3. In a large bowl, combine mayo, orange juice, honey, orange peel, ginger, salt and nutmeg.


4. Add the warm potatoes, celery and dates; toss to coat well.


5. Cover and chill.


6. Before serving, toss in pecans.


7. For a nice presentation, spoon salad onto lettuce-lined platter.


8. Arrange oranges around salad.

Hey, here's a tip for you. Whenever you need a recipe without milk simply google ';vegan [whatever it is]'; since vegans don't consume milk. And pretty much anything you're craving, you'll find it.

    Try making sweet potato french fries! Theyre easy to make and taste delicious! All you have to do is cut up the sweet potatoe into strips (or whatever shap you like) , grease the pan and the potatoes, then pop em' in the oven for about 20 minutes flipping them over at 10 minutes.

    sweet potato pie: {spicy}


    1 1/2 cups cooked, mashed sweet potatoes,


    1/2 cup sugar, 1 teaspoon cinnamon, 1 teaspoon allspice, 1/2 teaspoon salt, 3 eggs well beaten, 1 cup milk, 2 tablespoons butter, melted, one 9'; unbaked pie shell.


    mash sweet potatoes into fine paste. mix in sugar,cinnamon, allspice and salt. add eggs.


    mix butter and milk; stir into potato mixture. {mix should be fairly liquidy} pour into unbaked pastry shell. bake at 350 degrees F for 40 to 45 minutes. 6 to 8 servings.


    You can also make yams like {you make} mashed potatoes and add nutmeg and cinnamon....serve with glazed ham and pineapple...mmm good!
    Bobby Flay just made some great sweet potato fries on the grill as a side dish. They had a maple syrup/dijon mustard glaze on them. But that was not a main course...





    I would like sweet potato soup. Bake the sweet potatoes with some varieties of squash, then puree in the blender with a little chicken broth and cream. Then pour into your pot and heat. Season with cumin, curry, salt, pepper and whatever other spices you like.





    I would also suggest baked sweet potatoes (big ones) split open with a nice hunk of pot roast (in gravy) put in the middle. Each person can dress their own as they like. We do this with regular potatoes too but they'd be extra wonderful with sweet pots.





    Cut them up with some parsnips and toss with a little evoo. Bake in the oven and serve with a grilled chicken breast that's been marinated in jerk seasoning. THe hot of the jerk seasoning and sweet of the roasted root veggies are a great combination.

    Ingredients


    300g/10陆oz red onions


    1 tsp garlic


    1 tsp ginger, grated


    2 tbsp light olive oil


    20g/1oz butter


    3 tbsp dry sherry


    1 tbsp palm sugar


    300ml/10fl oz water


    750g/1lb10陆oz sweet potatoes


    750g/1lb10陆oz carrots


    2 tsp fish sauce


    1 tbsp tomato paste


    2 tsp sesame seeds, toasted


    7.5ml/1陆 tsp chilli flakes


    800ml/27fl oz tinned coconut milk


    50g/2oz chopped coriander


    15ml/3 tsp cumin seeds, toasted


    陆 lemon, juice only


    coconut, grated and toasted, for garnish


    100g/3陆oz sweet potatoes, lightly poached and diced





    Coconut Pesto


    2.5ml/陆 tsp chilli flakes


    1 tsp soy sauce


    50g/2oz coriander leaves including stalks


    pinch of chilli flakes


    1 tbsp freshly grated coconut


    1 tbsp sesame oil


    1 tbsp pine nuts


    lemon juice, maldon salt and pepper to season


    sunflower oil (to get consistency)











    Method


    1. Sweat the onions, garlic and ginger in oil and butter.


    2. Add sherry and sugar, and sweat further for 5 minutes until it goes thick and sticky.


    3. Add water.


    4. Add sweet potatoes, carrots, fish sauce, tomato paste, sesame seeds, chilli flakes and coconut milk and simmer for 1 hour until all vegetables are soft. Top up with water as it evaporates.


    5. pur茅e with a hand blender and add coriander, cumin and lemon juice. If you prefer smooth soup blend in an electric blender.


    6. To make the pesto, pur茅e all the ingredients together, if it is too thick add some sunflower oil to loosen it.


    7. Garnish the soup with coconut pesto and diced sweet potato.









    How I make a simple sweet potato pie:





    Get a graham cracker crust from your grocery (or make one yourself, but buying at the store saves time/effort).





    Get 1 CAN of sweet potatoes and


    and 2 large fresh sweet potatoes





    Peel and chop the fresh sweet potatoes and put in boiling water for about 10-15 mins or until soft.





    Drain and rinse the canned sweet potatoes.





    In a large bowl, put the canned s-potatoes and the drained cooked potatoes and


    1 package cream cheese (softened)


    1 cup packed brown sugar


    2 tablespoons butter (softened)


    1 tsp. salt


    1/2 tsp. black pepper


    1 egg





    Mix with mixer and pour into crust.





    Bake on 325 for about 25 mins.



    I am in love with sweet potatoes. Sweet potato fries are awesome sprinkles with cinnamon sugar. or sweet potato just like a potato add your butter and a little cinnamon and a touch of salt and it is awesome.     1 (14-ounce) can EAGLE BRAND庐 Sweetened Condensed Milk (NOT evaporated milk)

    Things like sweet potato pie are all based on opinions. You can go t any recipe site and find a basic recipe, but then its up to you to add what you want based on your tastes. Personally i like to add lots of brown sugar, or even a layer of it, to the pie to give it more sweetness. I also like to put some marshmallows on the top of mine.





    You can also add cinnamon to taste.





    Oh, and if you're mashing the potatoes for the pie, then remember to add WARM milk while mashing. Warm milk will make them creamier and have a better texture and taste.

    POTATOES


    2 1/4 lbs sweet potatoes, peeled and chopped


    1 cup half-and-half


    3/4 cup packed brown sugar

    1 1/2 cups miniature marshmallows

    2 medium sweet potatoes, scrubbed


    non-stick vegetable oil spray

    1/4 tsp. ground ginger


    1 C. milk


    1 9-inch unbaked pie shell


    3 egg whites





    Directions


    Preheat the oven to 350 degrees. For the filling, using an electric hand mixer, combine the potatoes, 1 C. of the sugar, butter, eggs, vanilla (or bourbon), salt, and spices. Mix thoroughly. Add the milk and continue to mix. Pour the filling into the pie crust and bake for 35-45 minutes, or until a knife inserted in the center comes out clean. Place the pie on a rack and cool to room temperature before covering with meringue.





    For the meringue, using an electric mixer, beat the egg whites until soft peaks form. Beat in the remaining 1/4 C. of sugar (1 tablespoon at a time). Continue beating until the sugar dissolves and the mixture is glossy and stiff, but not dry. With a rubber spatula, spoon the meringue onto the pie, forming peaks. Make sure the meringue touches the crust all around. Sprinkle with a pinch of granulated sugar. Bake for 10-12 minutes, or until delicately browned.     I don't want to fry them, so I was looking for a tasty recipe to bake or grill them.Anyone have a good recipe for sweet potato fries, baked or grilled?
    Cut in fry shaped pieces (you don't need to peel the sweet potatoes), put in a bowl and mix with some seasoning (whatever you like - chili flakes, paprika, other savoury spices work well, also salt %26amp; pepper), add a tablepoon or two of oil (I generally use olive oil) and mix together.





    Spread on a cookie sheet and bake at 350 degrees. How long it takes depends on the thickness of the fries and how crispy you want them (the more oil you add the crispier it is but this may defeat the purpose of baking them).Anyone have a good recipe for sweet potato fries, baked or grilled?

    I bought a jar of homemade Sweet Potato Butter at a vegetable stand in North Carolina while visiting relatives on vacation. I live in New York and can't find the delicious butter anywhere.. I would like to try making some for myself and need your help in finding a good recipe.Does anyone have a good southern recipe for Sweet Potato Butter?
    Makes 3 1/4 cups











    2 cups sweet potatoes, about 3 large


    - cooked and mashed


    3/4 cup sugar


    1 1/2 cups unsweetened apple cider


    1 teaspoon ground cinnamon


    1/4 teaspoon ground cloves


    Combine first 3 ingredients in a small saucepan; bring to a boil, and cook, stirring constantly, until sugar dissolves. Reduce heat; add cinnamon and cloves. Simmer, uncovered, 1 1/2 hours, stirring frequently.





    Refrigerate at least 24 hours before serving. Serve with toast or english muffins.





    If desired, while hot spoon into hot sterilized jars, leaving 陆-inch headspace, wipe jar rims. Cover at once with metal lids, and screw on bands. Refrigerate.

    1 md shallot -- peeled, thinly sliced


    1/4 c cider vinegar

    Instructions





    Heat oven to 400 degrees. Prick sweet potatoes. Place on a baking sheet and cook about 40 minutes, or until softened. Let cool. Peel sweet potatoes, cut into chunks and set aside. Melt 2 tablespoons butter in an 8-inch skillet over medium heat. Reduce heat to medium low and add shallots; cook, stirring occassionally, until carmelized, 6 to 8 minutes. Add vinegar, cook 2 minutes. Stir in ginger, mustard, cayenne, salt and pepper. Cook over low heat 2 to 3 minutes. Place sweet potatoes in a food processor; add shallot mixture, process until smooth. Transfer mixture to a heavy saucepan. Over low heat, cook 1 hour, stirring often, until it takes on a deep rich color.


    Cool completely. Transfer mixture to an electric mixer. Add remaining 4 tablespoons butter in small pieces. Whip until fluffy; serve with biscuits.

    SWEET POTATOES





    2 cans (1 lb. 13 oz. each) yams, or sweet potatoes, drained


    1/2 c. melted butter


    1/2 c. granulated sugar


    1 tsp. cinnamon


    1/4 c. orange juice


    1 egg


    1/4 tsp. salt


    1/2 c. Southern Comfort





    Beat drained sweet potatoes until fluffy. Beat in the remaining ingredients. Put in oven proof casserole.


    Top with: 1/2 c. packed brown sugar





    Spread this over the casserole and bake at 350 degrees for 30-40 minutes until heated through.

    2 cups sweet potato, grated


    1/4 cup brown sugar


    2 small eggs, beaten


    1/2 teaspoon cloves


    1/2 teaspoon allspice


    1/3 teaspoon cinnamon

    1/3 cup orange juice


    1/3 cup butter, melted*





    Butter a baking dish and preheat oven to 350 degrees F.





    Combine all ingredients and pour into the dish. Bake for one hour.





    *Using real butter will give the best results.


    You can add marshmallows to the top, or pecans to the mixture, or any thing you want to suite your fancy. I some times sub some Bourbon whiskey.     INGREDIENTS


    6 large sweet potatoes, peeled and quartered


    1/2 cup butter, melted


    2/3 cup dark brown sugar


    2/3 cup white sugar


    4 eggs, beaten


    2/3 cup orange juice


    2 teaspoons vanilla extract


    DIRECTIONS


    Preheat oven to 350 degrees F (175 degrees C). Grease a 2 1/2 quart baking dish.


    Bring a large pot of water to a boil. Add potatoes and cook until tender, about 20 minutes. Drain and mash.


    In a large bowl, combine 2 cups mashed sweet potatoes, butter, brown sugar, white sugar, eggs, orange juice and vanilla until smooth. Pour into prepared dish.


    Bake in preheated oven 40 minutes

    3. Pour the mixture into 1 1/2-quart round baking dish.





    4. Combine the remaining 1/2 cup pecans and the remaining 1/2 cup brown sugar with the butter and mix well. Dot the top of the potato mixture with spoonsful of the butter mixture. Bake for about 45 minutes, or until bubbly.

    55g/2oz caster sugar


    1 lime, zest only


    55g/2oz caster sugar

    Method


    1. Bring a pan of water to the boil and cook the potato for 6-8 minutes or until tender. Drain.


    2. Melt a knob of butter into two blini pans (or a very small frying pan). Add the sugar and lime zest and heat gently to caramelise.


    3. Add the cooked sweet potato to the pans and heat for 3-4 minutes.


    4. Meanwhile, cream together the sugar and butter in a food processor. Add the flour, egg and lime zest and blend together to combine.


    5. Pour the mixture into the pans with the potato and then transfer to the oven.


    6. Bake for 10-12 minutes, or until golden brown.


    7. Remove from the oven, turn out onto serving plates and drizzle with cream to serve.

    30g/1oz unsalted butter, for greasing


    110g/4oz self-raising flour


    110g/4oz caster sugar


    110g/4oz unsalted butter

    陆 sweet potato, diced and boiled until soft


    2.5cm/1 inch piece of ginger, peeled and finely chopped


    For the ginger syrup


    110g/4oz caster sugar


    5cm/2 inch piece of ginger, peeled and finely chopped


    1 orange, peeled and segmented, to serve





    Method


    1. Grease a small pudding basin with butter.


    2. Place the flour, sugar, butter, eggs and sweet potato into a food processor. Blitz together until smooth and combined.


    3. Pour the mixture into the bowl and cover with cling film.


    4. Place in the microwave and cook on HIGH for four minutes.


    5. To make the ginger syrup, gently heat the sugar in a heavy-based pan and cook over a low heat until dissolved and a caramel has formed. Add the chopped ginger, shaking the pan until it is well coated in the caramel.


    6. Turn out the sponge pudding onto a serving dish and drizzle the ginger syrup over.


    7. Garnish with the segmented orange and serve.

    1 cup of chopped pecans





    boil or bake pototes, Peel potatoes after baking if you bake them! I find that they are a brighter color if you bake them. Whip with milk, add eggs, sugar, margarine and vanilla. Mix. Pour into a buttered casserole.





    Mix together topping ingredients. Spoon on top of potatoes.





    Bake 35 minutes or until center is set at 350 degrees.

    To make a potato pie, you need:





    4 large potatoes

    Boil the potatoes until tender. When you stick a


    fork in them it should go in easy but you don't


    want them to fall apart.





    Let the potatoes cool and then peel them.

    ingredients in the bowl of potatoes. Stir

    Whether you used a ready made pie crust or

    I like to eat the pie while still hot. It's


    good cold too though.





    If you want you can make a meringue topping by


    blending confectionary sugar with egg whites.


    After the pie is almost done, spread the


    meringue thinly across the top. Continue baking


    until the meringue turns light brown. If you


    use the meiangue, you can add the egg yokes


    to the pie if you like. I prefer my pie


    without eggs, so I just save the yokes for breakfast

    2 cans sweet potatoes (trust me) drained, rinsed


    2 eggs


    1/2 package cream cheese, softened


    3 T brown sugar (heaping spoonfuls!)


    2 T butter, softened


    Dash nutmeg


    Dash cinnamon

    Dash pepper





    Place above in a blender and blend until smooth. Some chunks are OK, but get rid of most of them.





    Pour into a ready made Graham Cracker Crust from the pie aisle. (Or make your own!).





    Bake 45 mins - 50 mins on 350.





    Check after 35 mins for doneness. If it is browning on top, reduce heat to 325.


    Let stand 10 mins before slicing.
    I make mine just like Sweet Di said, from fresh sweet potatoes, not canned, only I double the eggs so that it comes out a little custardy. Deeellicious! Just remember to refrigerate the leftovers because of the eggs.

    Pom-Pom Sweet Potatoes





    Ingredients (use vegan versions):





    2 medium sweet potatoes [2 large regular potatoes are OK, too]


    2 tablespoons oil


    3 dried red chilies, de-seeded, optional


    1/4 teaspoon asafetida


    3 tablespoons ground dried pomegranate seeds [anardana]


    3/4 teaspoon salt


    spice masala:


    1/4 teaspoon turmeric


    1 tablespoon coriander powder


    2 teaspoons cumin powder


    1/2 teaspoon cayenne or paprika





    Directions:





    Boil the potatoes until they are tender but a bit firm. Cool them off, then cube them in 陆- inch pieces. Set aside.





    Heat the oil in a medium skillet until sizzle-hot. Add the dried red chilies and the asafetida. Fry until the chilies turn a few shades darker.





    Add the potato pieces and salt. Stir-fry until they are crispy and golden. Now add the masala. Continue to stir-fry for a few minutes, making sure to coat all the potato pieces evenly.





    Add the ground dried pomegranate seeds, again coating the potato pieces evenly. Cook for another 3-4 minutes. Done.

    Try reducing the amount of liquid, or leave out one egg.
    I would not use Tapioca or flour, personally. However, I would try using a little less liquid and add cream cheese in the liquids place.

Slice marshmallows in half and top each sweet potato with two halves. Top with a spoonful of crushed pineapple. Put reserved pineapple syrup or juice in a saucepan and bring to a boil. Drizzle each sweet potato with a little of the juice. Place sweet potatoes under broiler and broil until browned.


    Serves 4 to 6.

    Heat oil to about 375掳 in deep fryer or about 1 inch deep in an electric skillet or deep skillet on stovetop. Fry potato slices in one-layer batches for a minute or two, or until golden brown. Lift chips out with slotted spoon and drain on paper towels. Sprinkle sweet potato chips with salt before serving.

    PREPARATION:


    Combine mashed sweet potatoes, butter, salt, pepper, and brown sugar; beat until smooth and well blended. Chill thoroughly. Shape chilled mixture into croquettes. Mix slightly beaten egg with water. Dip sweet potato croquettes into crumbs, then into beaten egg mixture, then in crumbs again. Fry in hot deep fat, about 370掳, until sweet potato croquettes are golden brown. Drain well. Recipe for sweet potato croquettes serves 4.





    Crunchy Sweet Potato Casserole:


    This sweet potato casserole recipe is made with marshmallows and chopped peanuts.


    INGREDIENTS:


    3 cups cooked riced sweet potatoes


    2 tablespoons butter


    1/2 cup warm milk


    1/2 teaspoon salt


    miniature marshmallows


    1/2 cup chopped peanuts


    PREPARATION:


    Add butter and salt to warm milk; stir until butter is melted. Blend with potatoes; beat until light and fluffy. Add more milk, if needed. Pile potatoes into a buttered casserole. Preheat oven to 375掳.


    Bake casserole 20 minutes. Generously top with miniature marshmallows and chopped peanuts. Return to oven and heat until marshmallows are lightly browned.

    6 sweet potatoes, peeled and cut crosswise into slices 1/2 inch thick


    Melted unsalted butter for brushing, plus 2 Tbs. butter


    1/2 cup honey, at room temperature


    1/4 cup fresh lime juice


    Salt and freshly ground pepper, to taste





    Bring a saucepan three-fourths full of water to a boil over high heat. Add the sweet potato slices and boil for 10 minutes. Drain and let cool.





    Prepare a charcoal or gas grill for direct grilling over medium-high heat. Brush the potato slices with the melted butter.





    Grill the potato slices over the hottest part of a charcoal fire or directly over the heat elements of a gas grill, turning once, until fork-tender, 4 to 5 minutes per side.





    Meanwhile, in a small saucepan over low heat, mix the honey and lime juice until smooth. Add the 2 Tbs. butter and stir until melted. Season with salt and pepper. Brush the sweet potatoes on both sides with the glaze and grill them briefly, turning once, about 30 seconds per side. Serve hot.

    Sweet Potatoes in Orange Cups





    6 sweet potatoes, unpeeled


    1/2 stick butter, softened


    1/4 cup orange juice


    1/4 cup chopped pecans


    6 large oranges (heavy for their size)


    48 mini-marshmallows





    Preheat oven to 375 degrees F.


    Cover sweet potatoes with cold water in a pot and boil until fork tender. Peel the potatoes, transfer to a bowl, and mash. Stir in butter, orange juice, and pecans and mix until incorporated.





    For the orange shells, cut each orange in half and scoop out the pulp using a small knife or grapefruit spoon. Reserve the pulp for another use. Fill each orange shell with the potato mixture and top off with the marshmallows. Bake until hot and the marshmallows are melted.

    6 medium sweet potatoes


    2 medium onions


    2 tablespoons vegetable oil


    salt


    2 tablespoons butter


    2 tablespoons all-purpose flour

    1/4 teaspoon pepper


    2 cups milk


    2 tablespoons chopped parsley





    In 5-quart saucepot over high heat, heat unpeeled sweet potatoes and enough water to over to boiling. Reduce heat to low; cover and simmer until sweet potatoes are just fork-tender but not soft, about 20 minutes; drain. Cool sweet potatoes until easy to handle.


    Meanwhile, slice onions 1/4 inch thick. In 12-inch skillet over medium-high heat, in hot vegetable oil, cook onions and 1/4 teaspoon salt until tender, stirring occasionally.





    Preheat oven to 375掳F. Grease 13'; by 9'; baking dish. Peel sweet potatoes and cut into 1/4-inch thick slices. In bottom of baking dish, arrange one-third of sweet potatoes; sprinkle with half of onions. Place half of remaining sweet potatoes over onion layer, then top with remaining onions.





    Arrange remaining sweet potatoes over onions.





    In 1-quart saucepan over medium heat, melt butter; stir in flour, ginger, pepper, and 1 teaspoon salt until blended; cook 1 minute.





    Gradually stir in milk; cook, stirring constantly, until sauce boils and thickens slightly.





    Pour sauce over potatoes in baking dish; sprinkle with parsley. Bake 30 minutes or until sauce is bubbly and mixture is heated through. If you like, broil 1 minute to brown top of potatoes slightly. Makes 6 accompaniment servings.
    Cut them up into strips, brush with olive oil, and bake them in the oven just like fries!





    How about mashed potatoes too, substitute the sweet potato with the regular. It's mainly just a difference in taste and texture, but still equally good in their own ways.
    thing i know is to bake like you would any other potato...then and lots of butta and sprinkle with cinnamon(i like lots of it) some folks also add sugar to thier cinnamon....try ....enjoy
    Try throwing them on the grill. It will add a great flavor to them. You can slice them up and put them in foil packets with other seasonings and flavors, like onion and thyme. It's fun, and really easy to clean.
    Sweet potatoes and apples. Just get 4 or 5 sweet potatoes and boil them until you can stick a fork in them and they are soft. Run cold water over the sweet potatoes and then the skins will basically fall off. Be sure to get all the skin off of the potatoes and then cut them into fairly large chunks. Transfer the sweet potatoes to a baking dish.


    Preheat oven to 350 degrees


    Core several apples. (I have had better luck with Granny Smith apples.) Cut apples into medium sized chunks. (If you want softer apples, quickly cook on the stovetop with some butter.) Add to the baking dish.


    Now here's where I always go a little over board, so adjust as you need to. Melt a stick of butter and then add a bunch of brown sugar and cinnamon and mix thoroughly. Spread evenly over the potatoes and apples. Put into the oven for 15-30 minutes. Apples and potatoes should be slightly brown. TASTES DELICIOUS!!! (Sorry that the recipe isn't exact, but it truly is very hard to mess this one up!)

    1/3 c. butter or margarine


    1 tsp. vanilla


    Combine all ingredients and pour into baking dish.

    1 c. brown sugar


    1/3 c. melted butter or margarine

    In medium saucepan, cook unpeeled potatoes in boiling water for about 20 minutes or until tender; drain.

    Makes 8 servings





    Ingredients:





    pastry for a 9-inch double crust pie


    3 medium-size SweetPotatoes (about 2 1/4 pounds total)


    1/2 teaspoon salt


    1/2 cup granulated sugar


    1/3 cup firmly packed brown sugar


    2 tablespoons lemon juice


    2 tablespoons all-purpose flour


    1 tablespoon pumpkin pie spice


    1 tablespoon butter, cut into bits





    Preparation:





    Preheat oven to 425 degrees F. Line a 9-inch pie plate with 1 layer of pastry, set aside.





    Wash, peel and cut SweetPotatoes into 1/4-inch slices. Combine 1 cup of water and the salt into a large saucepan. Add SweetPotato slices. Cover and bring to a boil over high heat. Reduce heat and simmer until SweetPotatoes are just barely tender when pierced, about 5 minutes. Drain slices, then rinse them with cold water until they are cool to touch. Drain slices well, transfer them to a large mixing bowl.





    To SweetPotatoes, add sugars, lemon juice, flour and pumpkin pie spice. Toss gently with a spatula until slices are evenly coated. Spoon SweetPotatoes into pastry-lined pie plate, dot top of potatoes with butter. Place top pastry over filling and crimp top and bottom pastries together to make decorative edge. Cut 3 to 4 slits in the top to allow steam to escape.





    Bake in 425 degrees F. oven until crust is browned and SweetPotatoes are tender when pierced, about 50 minutes. (If edges of crust start to brown too quickly, drape lightly with strips of foil. Cool pie on wire rack at least 1 hour. Serve warm or cool.

    CREAMY SWEET POTATO PIE





    1 frozen regular pie crust (bake following directions on pkg.; set aside)


    3/4 c. brown sugar


    2 tbsp. cornstarch


    1/2 tsp. salt


    1 tsp. ground cinnamon


    1/2 tsp. ground nutmeg


    1/2 tsp. ground ginger


    1/4 tsp. ground cloves


    2 eggs


    1 (16 oz.) can sweet potatoes (2 c.)


    1 (12 oz.) can evaporated milk





    Beat sweet potatoes until smooth. Set aside. Mix brown sugar, cornstarch and spices in 3-quart saucepan until well blended. Stir in eggs, sweet potatoes and evaporated milk until well blended. Cook over medium heat, stirring constantly, until mixture thickens and boils.


    Boil and stir 2 minutes. Cool 5 minutes. Pour into pie crust. Refrigerate 3 hours. Spread top of pie with Redi Whip or any whipped cream. Refrigerate any remaining pie immediately.





    Serves 6.
    Spicy Sweet Potato Pie





    Ingredients








    2 9'; Deep Dish Pie Shells


    3 Cups Sweet Potato Puree (2 to 3 Large Sweet Potatoes)


    4 TBL Melted Butter


    2 Tbl Vanilla


    4 Eggs


    2/3 Cup Heavy Cream


    1/3 Cup Maple Syrup


    1/3 Cup Brown Sugar


    1/4 Cup Spiced Rum


    2 tsp Cinnamon


    1/2 tsp nutmeg


    1/2 tsp cloves


    1/2 tsp cayenne pepper (or more) (optional)





    Directions





    Pre bake the pie shells half way.


    Heat the oven to 425 degrees.


    Cut your sweet potatoes in half and lay them flat on a baking dish.


    Bake for approximately 1 hour or until very tender.


    Remove, cover and let cool.


    Peel the skin off of the sweet potato and puree. Do not add water.


    In a large mixing bowl, add all ingredients and mix well.


    Turn down the oven to 375 Degrees.


    Divide the ingredients between both pie shells.


    Bake for 45 to 50 minutes.


    Top with pecans after about 15 minutes.


    You may also drizzle a little maple on top of the pies at that time.


    Let cool on the counter at room temperature.


    Once cool, place a small amount of saran wrap on top of the pie to help keep the pie moist and not form a tough skin.

    2. Turn oven up to 375掳. Fill a small saucepan with water. Add potato, bring to a boil, reduce heat, and simmer until potato is very tender, about 12 minutes. Drain.





    3. In a bowl, combine flour, salt, ginger, cinnamon, nutmeg, and cloves; set aside.





    4. Pass potato through a food mill or potato ricer into the bowl of an electric mixer. Add sugar, eggs, and condensed milk. Mix until combined.     INGREDIENTS


    2 cups cooked and mashed sweet potatoes


    2 eggs

    DIRECTIONS


    Preheat oven to 425 degrees F (220 degrees C).

    Par boil them,brush with olive oil,then grill.
    CANDIED SWEET POTATOES





    2 pounds sweet potatoes, cut into 1/2'; slices


    1/2 cup packed brown sugar


    3 tablespoons butter


    3 tablespoons water


    1/2 teaspoon salt





    Wash sweet potatoes but do not pare. Heat enough salted water to cover potatoes to boiling. Add potatoes. Cover and heat to boiling. Cook until tender, 30 to 35 minutes; drain. Slip off skins.


    Mix brown sugar, butter, water and salt in 8-inch skillet. Cook over medium heat, stirring constantly, until smooth and bubbly. Add sweet potato slices; stir gently until glazed and heated through.





    Serving Size: 6
    Peal the Sweet potatoes and:





    1) Cut into Fry shapes. Place on foil lined cookie sheet, brush with melted butter and cook for 20 mins. Very good tasting.





    2) Dice up into cubes and put in a plastic bag. For every two cups of potatoes add one envelope of Onion Soup mix and 2 tablespoons of oil. Shake up and place in a cake pan. Bake for 20-30 minutes. Or these can even go in a foil bag and put on the grill for 30 mins. When I do them on the grill I will also add chopped green onion and garlic. I also place like 3- 4 tablespoons of butter in with them.

    SWEET POTATO PINEAPPLE, MARSMELLOW CASSEROLE


    Boil 1 lb of peeled sweet potato until tender. In a separate pot boil 2 cups of heavy cream with 2 cups of whole butter. Season with salt and white pepper.     1. Santa Fe Sweet Potato Corn Salad





    /4 cup olive oil


    2 teaspoons red wine vinegar


    2 teaspoons balsamic vinegar


    2 teaspoons Dijon mustard


    2 teaspoons lemon juice


    1/2 teaspoon salt


    1/4 teaspoon black pepper


    1/2 teaspoon ground cumin


    1 1/2 cups peeled, diced sweet potatoes (one 8-10 ounce sweet potato)


    1 cup frozen corn


    1 can (15 ounce) black beans, rinsed and drained

    1/4 cup crumbled feta cheese

    2. Sweet Potato Chocolate Chip Mini Muffins





    2 sweet potatoes (about 6 ounces each)


    1 cup flour


    2 cups light brown sugar


    2 teaspoons cinnamon


    1/2 teaspoon salt


    2 teaspoons baking soda


    1 cup vegetable oil


    4 eggs


    1 cup mini chocolate chips








    Preheat oven to 350掳F.


    Cut sweet potatoes into large pieces. In a medium saucepan, cook in boiling water until tender when pierced with a fork. Drain and cool. Remove skin and puree in food processor or mash thoroughly with a fork. This should yield 1 1/4 cups sweet potato puree.





    In a large bowl, combine flour, sugar, cinnamon, salt and baking soda. In another bowl, mix together oil, sweet potato puree and eggs.     3. Sweet Potato Rosemary Soup





    1 tablespoon olive oil


    1 large onion, chopped


    2 sweet potatoes (6-8 ounces each)


    2 carrots


    2 cloves garlic, minced


    5 cups chicken or vegetable stock


    1 tablespoon fresh chopped rosemary


    1 tablespoon fresh thyme leaves


    2 large Granny Smith apples


    1/2 cup heavy cream


    Salt and white pepper





    In a large soup pot heat oil. Sautee onion 5 minutes or until softened. Peel and cut sweet potatoes and carrots into 2-inch pieces and add to pot with garlic. Cook 2 minutes more. Stir in stock and fresh herbs. Peel, core and cut apples into 2-inch pieces; add to soup and bring to a boil. Lower heat and simmer 15-20 minutes until vegetables are tender when pierced with a fork.     Ingredients


    1kg/1lb 2oz sweet potatoes, peeled and sliced thinly - about the thickness of a 10p piece is ideal


    2 tbsp olive oil


    3 garlic cloves, finely chopped


    陆-1 red chilli (depending on variety and heat strength), chopped


    finely (or 1 tsp dried chilli flakes - not powder)


    250ml/8fl oz single cream


    salt and black pepper











    Method


    1. In a large mixing bowl toss the sweet potato slices with the oil and all the other ingredients until the slices are well coated and the garlic and chilli well-distributed.


    2. Transfer to a lightly oiled gratin dish, spreading out the slices with your fingertips, you do not have to layer the gratin piece by piece, but try to ensure that the slices are mostly lying flat.


    3. Pour over any cream remaining in the bowl and trickle the remaining oil over the gratin.


    4. Bake in a preheated, fairly hot oven (180C/350F/Gas 5) for 40-50 minutes until the sweet potato is completely tender and the top is browned and crispy.

    * 900 g (2 lb) sweet potatoes, scrubbed and cut into 1 cm (陆 in) slices


    * 4 skinless boneless chicken breasts (fillets), about 140 g (5 oz) each

    Sweet potato biscuits, recipe as follows.


    Wash, prick, bake 1 pound of sweet potato at 350 degrees F until soft and juices run out, about 1 hour. Cool, peel, and discard skins. Place puree into a food processor or blender and add 1/2 c. buttermilk or milk. Set aside.


    Sift 2 1/2 c. all purpose flour, 4 tsp. baking powder, 1 tsp. salt, 1/4 c. brown sugar, 1/4 tsp cayenne red pepper together, set aside.


    Cut 8 TBL. cold butter into small pieces. Add butter to dry ingredients, cutting in until mixture resembles coarse sand.


    Preheat oven to 400 degrees F.


    Now add puree to flour/butter mix, stir until well combined. Turn dough out onto floured surface and gently knead 2 or 3 times until a fairly smooth dough is formed. Roll dough out to 1/2 inch thickness, cut with a biscuit or cookie cutter, Place discs onto an ungreased cookie sheet with each biscuit barely touching the one next to it. Beat one egg with a few drops water. Brush mixture over tops of biscuits, sprinkle with sugar if you wish a slightly sweeter biscuit.


    Bake at 400 degrees F about 10 -12 minutes until golden brown. Serve warm with cranberry relish or butter and honey. Yummy!

    3 lbs. sweet potatoes, peeled %26amp; cut into cubes


    2 eggs


    1/2 cup brown sugar - divided


    1/2 cup butter - melted - divided


    1 teaspoon salt


    1 teaspoon ground cinnamon


    up to 1/2 cup orange juice


    1 cup chopped walnuts


    large marshmallows





    In a large saucepan over high heat, bring potatoes to boil, reduce heat; cover and simmer 15-20 minutes and drain.





    Beat potatoes until slightly smooth, beat in eggs, 1/4 cup brown sugar, 1/4 cup melted butter, salt and cinnamon.





    Starting with 1/4 cup orange juice, make mixture moist and fluffy.





    Spread in a 2-3 quart pan. Top with nuts. Sprinkle 1/4 cup brown sugar, then 1/4 cup melted butter. Place Marshmallows on top.





    Bake at 350 degrees for 25-30 minutes. Don't let marshmallows over cook.

    Butter a baking dish. Add fresh or canned sweet potatoes. Brown one smoked sausage (hillshire farm) Add to sweet potatoes. Top with butter pats and cover with foil. If using fresh yams, cook for a half hour then remove cover and let brown. Serve hot. This is delicious.

    * Grated rind of 1 orange


    * Freshly ground pepper


    * 1/8 teaspoon grated nutmeg

    * 1-1/2 cups milk


    * 2 tablespoons sesame seeds


    Peel the sweet potatoes and either slice them very thin or grate them. Spread half the sweet potatoes over the bottom of a shallow 1-1/2-quart casserole, sprinkle half of the grated orange rind over, and season with some pepper and nutmeg.(If you are using country ham, you probably won't need salt; otherwise season lightly with salt). Arrange overlapping pieces of ham over the sweet potatoes, spread mustard on top, then finish with the remaining sweet potatoes and a little more of the pepper and nutmeg. Pour the milk over all. Cover lightly with foil and bake in a 375-degree F. oven 40 minutes. Remove the foil, sprinkle sesame seeds over the top, and bake another 15 to 20 minutes until the potatoes are tender and all the liquid has been absorbed.

    DIRECTIONS


    Preheat oven to 350 degrees F (175 degrees C). Butter a 2 quart baking dish.


    Place the sweet potatoes and their liquid in a medium saucepan, and bring to a boil. Cook 15 minutes, or until tender. Remove from heat, drain, and mash.


    In a medium bowl, mix the mashed sweet potatoes, white sugar, eggs, 1/3 cup butter, milk, and vanilla extract. Spread evenly into the prepared baking dish.


    In a separate bowl, mix the brown sugar, chopped pecans, flour, and 1/3 cup melted butter. Sprinkle over the sweet potato mixture.


    Bake 35 minutes in the preheated oven, or until a knife inserted near the center comes out clean.
    Have you considered making the recipe you have but substituting rice flour or potato flour? You can probably find these at your regular supermarket, but if not, try a health food store or Wholefoods. My husband is gluten-intolerant, so we mostly use rice flour, though I tried potato flour recently, which was also OK.

    I also have Celiac disease. I just subsitute rice flour in recipies 1:1. In something like a casserole it will turn out great. If you need to use a cream soup in it, Progresso's cream of mushroom is gluten free. Sometimes I just use canned milk with a little rice flour too. That's really sweet of you to want to do that for your roomate! Make sure that you don't use soy sauce, or blue cheese in any of your recipes either. They are gluten sources people don't think of often. Have a happy Thanksgiving!!
