4 1/2 cups cooked and mashed sweet potatoes


1/2 cup butter, melted


1/3 cup milk


1 cup white sugar


1/2 teaspoon vanilla extract


2 eggs, beaten


1 cup light brown sugar

1/3 cup butter


1 cup chopped pecans





Serves 16.





Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.


In a large bowl, mix together mashed sweet potatoes, 1/2 cup butter, milk, sugar, vanilla extract, and eggs. Spread sweet potato mixture into the prepared baking dish. In a small bowl, mix together brown sugar and flour. Cut in 1/3 cup butter until mixture is crumbly, then stir in pecans. Sprinkle pecan mixture over the sweet potatoes.


Bake for 25 minutes in the preheated oven, or until golden brown.

Sweet Potato Casserole


2 1/2 pounds sweet potatoes (3 medium), peeled and cut into 2-inch chunks


2 large eggs


1 tablespoon canola oil


1 tablespoon honey


1/2 cup low-fat milk


2 teaspoons freshly grated orange zest


1 teaspoon vanilla extract


1/2 teaspoon salt





Topping


1/2 cup whole-wheat flour


1/3 cup packed brown sugar


4 teaspoons frozen orange juice concentrate


1 tablespoon canola oil


1 tablespoon butter, melted


1/2 cup chopped pecans





1. Place sweet potatoes in a large saucepan and cover with water. Bring to a boil. Cover and cook over medium heat until tender, 10 to 15 minutes. Drain well and return to the pan. Mash with a potato masher. Measure out 3 cups. (Reserve any extra for another use.)


2. Preheat oven to 350掳F. Coat an 8-inch-square (or similar 2-quart) baking dish with cooking spray.


3. Whisk eggs, oil and honey in a medium bowl. Add mashed sweet potato and mix well. Stir in milk, orange zest, vanilla and salt. Spread the mixture in the prepared baking dish.


4. To prepare topping: Mix flour, brown sugar, orange juice concentrate, oil and butter in a small bowl. Blend with a fork or your fingertips until crumbly. Stir in pecans. Sprinkle over the casserole.


5. Bake the casserole until heated through and the top is lightly browned, 35 to 45 minutes.

LOW FAT SWEET POTATO CASSEROLE





4 large sweet potatoes, peeled and diced


3 egg whites


1 T brown sugar


Dash cinnamon, Dash nutmeg


Salt/pepper





1/4 cup FAT FREE Half and Half *near the regular half and half


OR


1/4 cup chicken stock





1 T margarine





Boil the potato chunks until tender (about 20 mins). Drain well and add the sugar, salt/pepper, spices, margarine, half and half OR chicken stock and mash with a masher or mixer until smooth like mashed potatoes.


Add in the egg whites and beat until incorporated.





Pour mixture into a sprayed baking dish (glass, if you have it) and bake uncovered for 30 mins on 350.
Ingredients:





1 large butternut squash (large enough to yield 2 cups mashed flesh)





1/2 cup Egg Beaters; Original





1/3 cup light vanilla soymilk





1/3 cup sugar-free maple syrup





1 tsp. cinnamon





1/4 cup SPLENDA; Granular

2/3 cup miniature marshmallows











Directions:





Preheat oven to 350 degrees. Peel squash and cut into large chunks (removing seeds). Fill a large, microwave-safe dish with a half an inch of water. Place squash into dish and cover with plastic wrap. Microwave for approximately 8 minutes (and drain). Squash should be tender enough to mash, but not fully cooked. With a potato masher, food processor or fork, mash squash. Measure out 2 generous cups, lightly packed, and place in an oven-safe baking dish. Add all ingredients except for marshmallows.     Cans of sweet potatos (as many as you need-don't know how many people you are serving). Drain juices and place in pan (spray with non-stick spray) and then dump bag of marshmallows on top - even out. Bake at 350 till bubbly and golden brown on top.
    Buy sweet potatoes or yams (6-8)

    Maple Bourbon Sweet Potato Pie





    1 (9-inch) basic pie crust, baked blind, recipe follows


    2 large or 3 medium sized sweet potatoes


    4 tablespoons (2 ounces) butter, melted


    1 teaspoon vanilla extract


    3 eggs


    1 egg yolk


    3/4 cup cream


    1/4 cup plus 2 tablespoons maple syrup


    1/4 cup plus 1 tablespoon brown sugar


    1/4 cup bourbon


    1/4 teaspoon kosher salt


    1/4 teaspoon grated nutmeg (preferably freshly grated)


    1/4 teaspoon ground cinnamon


    1/8 teaspoon ground cloves


    A few grinds black pepper


    Preheat oven to 425 degrees F.


    Pierce the sweet potatoes at each end with a fork and place them on a foil-lined baking sheet. Roast until the potatoes are soft, about 1 hour, turning them over halfway through the baking time. Cool, peel, and put the flesh through a food mill or mash smoothly with a potato masher. You should have 2 cups of puree.





    Turn oven down to 375 degrees F.





    Combine the puree with all the remaining ingredients for the filling. Whisk until well combined and smooth. Pour the filling into the partially baked pie shell. Bake for about 45 to 50 minutes, until the filling is just barely set. When the rim of the pie plate is nudged, the very center of the filling should barely move.





    Cool the pie to room temperature. It can be made several hours or up to 1 day in advance.





    Basic Pie Crust:


    2 2/3 cups all-purpose flour


    3/4 teaspoon kosher salt


    3/4 teaspoon sugar


    4 ounces (8 tablespoons) chilled butter, cut into pieces


    4 ounces (1/2 cup plus 1 tablespoon plus 2 teaspoons) chilled vegetable shortening, cut until pieces


    1/4 to 1/2 cup cold water, as needed


    Place the flour, salt and sugar in the bowl of a food processor with a steel blade. Pulse to combine.





    Add the chilled butter and shortening; pulse until the fat is evenly cut in and the mixture resembles coarse cornmeal. Remove to a mixing bowl.





    Working quickly, gradually add enough cold water, while tossing and stirring with a fork, until the dough just begins to come together. Divide the dough into 2 even portions, flatten into rounds, wrap in plastic, and chill for a few hours or overnight.





    Roll out 1 portion and fit it into a 9-inch pie pan. Crimp edges. Reserve remaining portion for another use. Line shell with foil or parchment paper and fill with dry rice or beans. Blind bake in a preheated 375 degree F oven for 20 minutes. Remove foil and beans before filling.

    2 cups peeled, cooked sweet potatoes


    1 1/4 cups sugar


    1/2 stick melted butter


    2 eggs


    1 teaspoon vanilla extract or 1 to 2 tablespoons bourbon


    1/4 teaspoon salt


    1/4 teaspoon ground cinnamon


    1/4 teaspoon ground ginger


    1 cup milk


    9-inch unbaked pie crust


    3 egg whites


    Preheat the oven to 350 degrees F.


    For the filling, using an electric hand mixer, combine the potatoes, 1 cup of the sugar, the butter, eggs, vanilla, salt, and spices. Mix thoroughly. Add the milk and continue to mix. Pour the filling into the pie crust and bake for 35 to 45 minutes, or until a knife inserted in the center comes out clean. Place the pie on a rack and cool to room temperature before covering with meringue.





    For the meringue, using an electric mixer, beat the egg whites until soft peaks form; beat in the remaining 1/4 cup sugar 1 tablespoon at a time.     Filling:


    2 pounds sweet potatoes, for 1 1/2 cups puree


    1/4 cup (1/2 stick) unsalted butter


    Pinch salt


    3 eggs


    1/2 cup sugar


    1 cup heavy cream


    1 tablespoon grated orange zest


    1 teaspoon ground cinnamon


    1/2 teaspoon freshly grated nutmeg


    Pastry:


    1 1/4 cups all-purpose flour, plus more for dusting


    1 tablespoon sugar


    Pinch salt


    1/2 cup (1 stick) unsalted butter, cold and cut into small chunks


    2 tablespoons ice water, plus more if needed


    1 egg white, lightly beaten





    Topping:


    1/2 cup pecans


    1 (8-ounce) package frozen cranberries


    1 (2.3-ounce) package amaretto cookies (about 12), such as Amaretti di Saronno





    Heat the oven to 375 degrees F.


    Prick the sweet potatoes with a fork and bake them until they are soft, about 1 hour. Remove from the oven and set aside until they are cool enough to handle.





    While the potatoes are cooking make the pastry: combine the flour, sugar, and salt in a large mixing bowl. Press the dough firmly into the bottom and sides so it fits tightly. Trim the excess dough around the rim and pinch the edges to form a border. Place a piece of parchment paper over the crust and fill with uncooked beans or pie weights. Bake the pie crust until it sets, about 20 minutes. Remove the parchment and beans. Brush the bottom with the beaten egg white and set aside.





    While the crust is cooking make the filling: When cool enough to handle, peel the sweet potatoes and puree the pulp in a food processor with 1/2 stick butter and a pinch of salt. Measure 1 1/2 cups puree into a bowl. In another bowl beat the eggs and sugar until the sugar has melted. Add the eggs to the sweet potato puree and whisk well. Add the cream, orange zest, cinnamon, and nutmeg and stir well to combine. Pour the mixture into the pie shell. Place the pie pan on a sturdy cookie sheet to catch any spills. Lower the oven temperature to 325 degrees F and bake until the pie is set but still jiggles slightly, about 40 minutes. Remove from the oven and allow it to cool.





    Meanwhile, put the pecans on a baking sheet and bake them with the pie for about 10 minutes to toast them. Remove them from the oven and let them cool. Thaw the cranberries in a strainer set over a bowl to catch the liquid. Put the cookies, pecans, and cranberries into a food processor and pulse them a few times until they are coarsely chopped.     -1/2 tsp. lemon flavoring


    -3/4 tsp. salt


    -3/4 tsp. ginger


    -3/4 tsp. nutmeg


    -1/8 tsp. ground cloves





    Method:-





    1) Heat oven to 350 degrees.


    2) Separate egg whites.


    3) Beat 1 egg white with 1 tablespoon water and brush over pie shell.


    4) Bake pie shell for 10 minutes in oven, remove.


    5) Beat egg yolks and add sweet potatoes, melted butter, sugars, syrup, cream, salt, flavorings and all spices.


    6) Beat egg whites until stiff and fold into sweet potato mixture.


    7) Pour into pie shell and bake until knife inserted in filling comes out clean, about 40-50 minutes.

    1 (9-inch) unbaked Cream Cheese Piecrust


    2 cups mashed cooked sweet potato (about 1 1/4 pounds)


    1/2 cup packed dark brown sugar


    1/4 cup 2% reduced-fat milk


    2 tablespoons dark rum


    1 1/2 teaspoons vanilla extract


    1/2 teaspoon ground nutmeg


    1/4 teaspoon salt


    3 large eggs


    1/2 cup flaked sweetened coconut





    Prepare Cream Cheese Piecrust in a 9-inch pie plate; set aside.





    Preheat oven to 350掳.





    Combine sweet potato and next 7 ingredients (sweet potato through eggs) in a food processor, and process until smooth. Spoon mixture into prepared crust; sprinkle with coconut.





    Bake at 350掳 for 1 hour or until set; shield edges of piecrust with foil after 20 minutes. Cool on a wire rack.

    Good luck! I'm going to watch this question in hopes that there is an easy recipe for it out there. I absolutely love sweet potato pie and try to make it - but I always fail! I'm pretty good at baking - but sweet potato pie is an extreme pie - only for the best!! My advice is that if you try to make it - make sure you also make something easy (like apple pie or cookies) so even if you mess it up you will have something to bring/eat.

    45 NILLA Wafers


    1/4 cup plus 1 Tbsp. butter or margarine, divided


    2 Tbsp. sugar


    1 can (40 oz.) sweet potatoes, drained


    4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened


    1/4 cup sugar


    1/4 cup dark corn syrup


    2 eggs


    1 tsp. pumpkin pie spice


    1 tsp. vanilla


    1 cup JET-PUFFED Miniature Marshmallows





    PREHEAT oven to 325掳F. Finely crush 35 of the wafers; place in medium bowl. Melt 1/4 cup of the butter. Add to wafer crumbs along with 2 Tbsp. sugar; mix well. Press firmly onto bottom and up side of 9-inch pie plate. Melt remaining 1 Tbsp. butter. Coarsely crush remaining 10 wafers; place in small bowl. Add melted butter; mix well. Set aside for later use.





    PLACE sweet potatoes, cream cheese, 1/4 cup sugar, the corn syrup, eggs, spice and vanilla in medium bowl. Beat with electric mixer on medium speed until mixture is well blended. Pour into crust.





    BAKE 1 hour to 1 hour 5 min. or until knife inserted in center comes out clean, topping with the wafer mixture and marshmallows after 55 min. Cool completely on wire rack. Refrigerate until ready to serve. Store leftover pie in the refrigerator.
    There are two kinds of sweet potato pie recipes - crusted and non crusted. With my recipe the filling is the same and you can either put it in a crust or not with a simple alteration:





    For the Filling:


    2 Large cans of sweet potatoes in syrup


    1/2 cup packed brown sugar


    1/2 cup granulated sugar


    1 egg


    1 can sweetened condensed milk


    1/4 cup heavy cream


    2 teaspoons pumpkin pie spice


    1 teaspoon cinnamon


    1 teaspoon vanilla or brandy flavoring


    3 tablespoons orange juice





    Drain the sweet potatoes. In a food processor pulse the potatoes on high mostly smooth. Add both sugars and egg. Blend until completely smooth. In a separate bowl combine the condensed milk, cream, spices, juice and flavoring of your choice. With the processor on low slowly add the cream mixture in a steady stream until completely combined.





    If you are making a crust pie then prepare a single crust as you would any other pie. Spoon the batter into the pie crust and bake at 350 degrees until the center of the pie is set - about 35 minutes.





    If you are making a crustless pie then spoon the batter into a casserole dish and bake at 350 degrees for about 30 minutes or until the center is set.





    Optional - you may top the pie/casserole with mini marshmallows after it has cooled and broil for 1 minute until they brown.

    6 eggs


    1 cup heavy cream


    2 tablespoons flour


    Fresh sprigs of mint


    Whipped cream in pastry bag


    1 cup chocolate sauce in squeeze bottle


    Powdered sugar





    Preheat the oven to 375 degrees F. In a mixing bowl, whisk the mashed sweet potatoes, sugar, cane syrup, cinnamon and vanilla together. Whisk in the eggs, one at a time. Whisk in the cream and flour. Pour the filling into the shell. Bake for about 45 minutes or until the pie is set. Place a piece of the pie in the center of the plate. Garnish with pie with mint, whipped cream, chocolate sauce and powdered sugar.

    8 large Sweet Potatos. Boil until soft than peel

    1/3 cup milk.





    Mash potatos using a mixer. Add teh rest of the ngredients. Mix until well blended. Put into a 9 by 13 inch pan or larger.

    6 (8 ounce) sweet potatoes


    1 1/2 tablespoons prepared horseradish


    2 tablespoons honey


    2 tablespoons butter or margarine


    1/2 teaspoon salt


    1/4 cup heavy cream





    DIRECTIONS


    Preheat the oven to 400 degrees F (200 degrees C). Place potatoes on a baking sheet and bake for 40 to 50 minutes, until tender enough to easily pierce with a fork. Cool slightly and remove peels.


    Place the cooked sweet potatoes into a large bowl and mash with the horseradish, honey, butter and salt. Whip with an electric mixer until light and fluffy, adding heavy cream as needed to get the texture you desire. Serve immediately, or keep warm in the oven until time to serve.





    I like to toast pecans with creole seasoning and sprinkle on top:-) Yummy!

    Roasted Garlic Sweet Potatoes





    Ingredients:


    4 sweet potatoes


    2 heads garlic


    2 tablespoons olive oil


    2 tablespoons butter (at room temperature)


    3/4 cup light sour cream


    1/2 cup reduced-fat cream cheese


    1/2 teaspoon cayenne pepper (optional)


    salt and pepper to taste





    Directions:


    Preheat an oven to 400 degrees F (200 degrees C).


    Prick the sweet potatoes with a fork or the tip of a paring knife; set aside. Cut off the top of the heads of garlic to expose the cloves, trimming about 1/4 inch off of the top of each clove. You may need to trim individual cloves along the sides of each head. Brush the cut cloves with the olive oil, then nestle each head into a piece of aluminum foil.


    Place the sweet potatoes and garlic cloves directly on the oven racks. Bake for about 1 hour, removing the sweet potatoes once they have softened, and removing the garlic heads once they are tender and nicely browned.


    Peel the sweet potatoes, and place into a mixing bowl. Squeeze the individual garlic cloves into the bowl, then add the butter, sour cream, cream cheese, and cayenne pepper. Mash until smooth, then season to taste with salt and pepper. Scrape the mashed potatoes into a 1 1/2 quart baking dish, and return to the oven for about 15 minutes to reheat.





    I also love making Spicy Sweet Potato Fries.





    Ingredients:


    6 sweet potatoes, cut into French fries (or buy a bag of frozen sweet potato fries)


    2 tablespoons canola oil


    1 tablespoon creole seasoning


    1/4 teaspoon cayenne pepper





    Directions:


    Preheat the oven to 425 degrees F (220 degrees C).





    In a plastic bag, combine the sweet potatoes, canola oil, creole seasoning, cayenne pepper. Close and shake the bag until the fries are evenly coated. Spread the fries out in a single layer on two large baking sheets. (Tip: take a piec of aluminum foil and crinkle. Spread out on the baking sheet and put fries on top. Less mess and crispier fries.)

    SPICY SWEET POTATOES





    4 c. mashed sweet potatoes, 4 med.


    2 tbsp. butter


    2 tbsp. cream or evaporated milk


    1 tbsp. brown sugar

    In medium saucepan, cook sweet potatoes 1/2 hour or until tender. Cool, peel, and mash in electric mixer or by hand with potato masher.     I've seen alot of recipes for sweet potato pie/caserole, but they all ask for canned sweet potatos. When i went grocery shopping last week i had picked up Yams. Can I find a recipe for sweet potato caserole using yams instead of the canned sweet potatos covered in heavy syrup?Sweet Potato Pie Recipe?
    Yes- I use 4 cups cooked yams/sweet potatoes. Mash them then use 1 cp sugar, 3 eggs, 1 cup evaporated milk, 1 teaspoon each of cinnamon and nutmeg, 3/4 cup of butter, 2 cups of minature marshmallows, and 1 cup of cocunut. mix all that together and bake in a 400 degree oven for 20 min.





    For topping I use 1 1/2 cups crushed cornflakes, 1/2 cup brown sugar, 1 cup chopped pecans, and 1/2 cup of butter. Return it to the oven for another 10 minutes.

    Those ';yams'; you find in the store are not really ';yams.'; They are sweet potatoes. You can and should use them.





    A REAL yam is a root vegetable that grows in the Pacific islands and tastes nothing like sweet poptatoes. I don't even think you can buy them in the U.S.
    Use a pumpkin pie recipe, but a creamy tip. Put your canned milk in the blender and your 2 cups of mashed yams in there and wize it up. Other wise they won't be creamy. Not the eggs, just the yams and milk. I did it with the eggs and it didn't do so good.

    boil or bake pototes, Peel potatoes after baking if you bake them! I find that they are a brighter color if you bake them. Whip with milk, add eggs, sugar, margarine and vanilla. Mix. Pour into a buttered casserole.





    Mix together topping ingredients. Spoon on top of potatoes.





    Bake 35 minutes or until center is set at 350 degrees.








    Do not substitute margarine for butter for the topping.

    This is a recipe I found then mesed with myslef and made it better. It is so good and yes the sweet potato biscuits are so yummy. They stay so moist with the sweet potato in there, and they are almost springy when you press them.

    My favorite recipe came from my mother-in-law in Alabama.

    INGREDIENTS


    4 pounds sweet potatoes, quartered


    1 1/4 cups margarine


    1 1/4 cups brown sugar


    3 cups miniature marshmallows, divided


    ground cinnamon to taste


    ground nutmeg to taste








    DIRECTIONS


    Preheat oven to 400 degrees F


    Grease a 9x13 inch baking dish.


    Bring a large pot of water to a boil. Add potatoes and boil until slightly underdone, about 15 minutes. Drain, cool and peel.


    In a large saucepan over medium heat, combine margarine, brown sugar, 2 cups marshmallows, cinnamon and nutmeg. Cook, stirring occasionally, until marshmallows are melted.


    Stir potatoes into marshmallow sauce. While stirring mash about half of the potatoes, and break the others into bite-sized chunks. Transfer to prepared dish.





    Bake in preheated oven for 15 minutes. Remove from oven and cover top evenly with remaining marshmallows. Return to oven and bake until marshmallows are golden brown.

    if you are using fesh sweet potatoes....peal them cut them into biote size peices and place them into a baking dish put about 2c of light brown sugar all over them a pound of real butter cut into small pieces a 1/4cup water place the sweet potatoes in a 350 degree oven for about 45 minutes or until soft make sure you cover with aluminimum foil so they will not burn take out of over put your marshmellows on and place back into the over until they are brown about 10-15 minutes...

    This is my favorite. You can use canned sweet potatoes (just heat them up on the stove) or bake them and then remove the skin. Mash with orange juice, (if you like them a bit sweeter use a little brown sugar) and butter. Squeeze the oranges for juice then clean out the pulp. Use orange halves with the pulp removed to create cups. Fill the cups with mashed sweet taters then put a marshmallow on top. Place in the oven until marshmallows are golden and melted.

    1 tablespoon water


    2 teaspoons Italian seasoning

    Boil sweet potatoes in water to cover for 10 minutes. Remove and allow to cool. Peel potatoes and cut into 1/4 by 1/4-inch thick batons.





    Meanwhile in a 5-quart pot or Dutch oven fitted with a candy or deep-frying thermometer, (or in an electric deep fryer), heat oil over medium-low heat until the thermometer registers 300 degrees F. Make sure you have at least 3 inches of space between the top of the oil and the top of the pan, as fries will bubble up when they are added.





    Increase the heat to medium-high and add fries, a handful at a time, to the hot oil. Fry, stirring occasionally, until potatoes are soft and limp and just begin to brown, about 3 to 4 minutes. Using a skimmer or slotted spoon, carefully remove fries from the oil and set aside to drain on paper towels. Let rest for at least 10 minutes or up to 2 hours.





    When ready to serve the fries, reheat the oil to 350F. Transfer the blanched potatoes to the hot oil and fry again, stirring frequently until browned and puffed, about 1 minute. Transfer to paper lined platter and allow to drain for a minute.





    Combine the brown sugar, salt, cayenne and cinnamon in a large bowl. Add the fries and toss to coat. Serve immediately.
    Try cutting the sweet potato like a french fry. Fry them in oil at high heat, the highest your fryer will go. They will not fry just like regular potatoes, but they will do well. Drain them on paper towels then season them with cinnamon/sugar(1 cup sugar to a teaspoon of ground cinnamon). Always a hit with my kids.

    Two Potato Packet





    2 medium sweet potatoes


    4 small red potatoes, thinly sliced


    1 medium sized onion, chopped


    2 tablespoons margarine or butter, cut into small pieces


    4 small sprigs of fresh rosemary, basil or oregano (I have used dried too, works just as good)


    Salt


    Pepper


    1/2 cup shredded smoked provolone or Gouda cheese (I have used mozzarella cheese and it works too)





    Fold four 24x18 inch pieces of aluminum foil in half to make 18x12 inch rectangles. Divide sweet potatoes and red potatoes among the foil rectangles, alternating and overlapping the slices. Top with onion, margarine, herbs, slat and pepper.





    Bring up opposite edges of the foil and seal with a double fold. Fold remaining edges together to completely enclose vegetables, leaving space for steam to build.

    1 tbsp. vanilla

    Pre-heat your oven to 400掳F. Boil the yams with the skin on until a fork or butter knife causes the yams to easily break apart when inserted. Cool yams slightly. Then place in a collander and run cold water over them to assist you with removing the skins since the yams will still be pretty hot. Beat yams with mixer on medium speed, stopping frequently to remove strings from the beaters. Once the strings are removed, add butter and continue to mix. Then add remaining ingredients. You may need to adjust the nutmeg and sugar to your tastes. I like my pie sweet with a good amount of nutmeg! Continue mixing your batter until it has a nice smooth consistency. The batter should not be thin or runny, and it should not be too thick either. If too thick, try adding a little more evaporated milk (by the tablespoon) until the batter is smooth. Pour your batter into your favorite unbaked 9 or 10 inch pie shell, sprinkle a dash of cinnamon on the top and bake for 50 minutes to 1 hour.(Tip: Brush the edges of your pie shell with ice water to prevent it from burning before the pie is actually done). Brown specs on the top of the pie are an indication that your pie is done. You can also insert a knife in the middle of the pie, and if it comes out clean it's done! Let cool for at least 1 hour before cutting and serving. This pie is simply delicious when served slightly warmed by itself, or go ahead and throw caution (and your diet) to the wind by placing a large scoop of french vanilla ice cream on top of a nice warm slice! I really like my pie nice and cold right out of the frig after it's set over night with a tall glass of ice cold milk. Hmmmmmmmmmm GOOD!

    Ingredients


    1kg/1lb 2oz sweet potatoes, peeled and sliced thinly - about the thickness of a 10p piece is ideal


    2 tbsp olive oil


    3 garlic cloves, finely chopped


    陆-1 red chilli (depending on variety and heat strength), chopped


    finely (or 1 tsp dried chilli flakes - not powder)


    250ml/8fl oz single cream


    salt and black pepper











    Method


    1. In a large mixing bowl toss the sweet potato slices with the oil and all the other ingredients until the slices are well coated and the garlic and chilli well-distributed.


    2. Transfer to a lightly oiled gratin dish, spreading out the slices with your fingertips, you do not have to layer the gratin piece by piece, but try to ensure that the slices are mostly lying flat.


    3. Pour over any cream remaining in the bowl and trickle the remaining oil over the gratin.


    4. Bake in a preheated, fairly hot oven (180C/350F/Gas 5) for 40-50 minutes until the sweet potato is completely tender and the top is browned and crispy.


    5. For extra crispness you can finish under the grill for 1-2 minutes.

    1/3 cup of brown sugar, firmly packed

    1 tablespoon of vanilla extract

    Preheat oven to 450 degrees.


    Bake the sweet potatoes for 45 minutes or until tender.


    While the potatoes bake, mix cream cheese, brown sugar, butter, vanilla, salt, and pepper in a bowl.

    Once the potatoes have been fully baked, remove from the oven and let cool.


    Slice each potato lengthwise.


    Using a large spoon, scoop out the flesh from the potatoes leaving a 1/4 inch of the flesh on the skin.


    Mix the removed potato meat with the cream cheese mixture.


    Add the pecans.


    Place the mixture back into the potatoes.


    Reduce the oven to 350 degrees.


    Bake the stuffed potatoes for 15 minutes
    Sweet Potatoes with Apples.





    Pre-cook two yams. Slice into rounds.


    Peel, core and slice two large apples.


    Starting and ending with sweet potato slices, layer sweet potatoes and apples in a buttered casserole.


    Sprinkle a little cinnamon sugar over each later and Dot with butter.


    Bake covered at 375 degrees until apples are tender.





    You can forget the butter if you are watching calories but the butter does add a wonderful flavor.
    CANDIED SWEET POTATOES





    4 sweet potatoes


    1/2 cup dark brown sugar


    1/4 cup frozen orange concentrate


    1/2 cup sherry (optional)


    1/4 cup butter





    Scrub and boil potatoes until tender, about 25-30 minutes, depending on size. Peel, then cut into 1 1/2-2 inch chunks.





    In an ovenproof casserole (or an aluminum foil loaf pan), melt butter with brown sugar and stir in sherry (optional). Add orange concentrate, stirring to combine well.





    Put sweet potatoes in the casserole dish and coat well with the butter/sugar mixture.





    Cover dish with aluminum foil to seal.





    Bake in a 350掳F oven for 30 minutes, turning to baste potatoes with liquid every 10 minutes or so.

    SWEET POTATO COCONUT CASSEROLE





    3 cups sweet potatoes, mashed


    1 1/2 cups sugar


    4 eggs, beaten


    1 teaspoon vanilla


    1 teaspoon dark rum (optional)


    1 teaspoon freshly squeezed lemon juice


    1/2 teaspoon nutmeg


    1 teaspoon cinnamon


    pinch of salt


    2 1/2 cups milk


    1 stick butter


    1 cup flaked coconut (optional)





    Wash and peel potatoes and boil until tender in salted water. Mash with butter while still hot. Stir in sugar, vanilla, lemon and seasonings.





    Beat eggs well and combine with milk. If using coconut, add to milk. Slowly add milk to sweet potatoes, stirring until well mixed.





    Butter a casserole and transfer potato mixture, spreading evenly. Dot the top with an extra tablespoon of butter, if desired.





    Bake at 400掳F until firm and lightly browned.

    SWEET POTATO PIE





    1 partially baked 10 inch pie shell


    3 eggs


    2 c. mashed sweet potatoes


    1/2 stick butter


    1/2 c. sugar


    1/2 c. light brown sugar


    1/2 c. dark Karo syrup


    1 1/4 c. evaporated milk


    1 tsp. vanilla flavoring


    1/2 tsp. lemon flavoring


    3/4 tsp. salt


    3/4 tsp. ginger


    3/4 tsp. nutmeg


    1/8 tsp. ground cloves





    Heat oven to 350 degrees. Separate egg whites. Beat 1 egg white with 1 tablespoon water and brush over pie shell. Bake pie shell for 10 minutes in oven, remove. Beat egg yolks and add sweet potatoes, melted butter, sugars, syrup, cream, salt, flavorings and all spices. Beat egg whites until stiff and fold into sweet potato mixture. Pour into pie shell and bake until knife inserted in filling comes out clean, about 40-50 minutes.

    SWEET POTATO CASSEROLE





    1 (16 oz.) can sweet potatoes


    1/2 c. brown sugar


    1/4 tsp. salt


    1/2 tsp. cinnamon


    1 egg, beaten

    Butter baking dish. Place 1/2 of mixture in dish. Dot with marshmallows, then add remaining mixture. Bake at 350 degrees for 30 minutes. Remove from oven, dot top with marshmallows and replace in oven about 10 minutes or until brown.

    AMBROSIA SWEET POTATO BAKE





    6 med. size sweet potatoes


    1 lemon, peeled


    1 orange, peeled


    1 c. crushed pineapple


    1/2 c. firmly packed brown sugar


    1/4 c. butter, melted


    1/4 c. flaked coconut


    Lemon twist





    Cook sweet potatoes in boiling water 20 to 25 minutes or until tender. Let cool to touch; peel and slice. Cut lemon and orange into 1/4 inch slices. Arrange sweet potatoes, lemon and orange slices in a lightly greased shallow 2-quart casserole.





    Combine pineapple, brown sugar and butter. Mix well and pour over sweet potatoes. Sprinkle with coconut. Bake uncovered at 350 degrees for 30 minutes. Garnish with lemon twist.

    APPLE BUTTER SWEET POTATOES





    2 1/2 lb. sweet potatoes


    1/4 c. unsalted butter


    1/2 c. apple butter


    1 tbsp. dark brown sugar


    1/4 tsp. salt


    1/3 c. pecans, coarsely chopped





    Pare sweet potatoes; cut into one inch cubes. Cook in lightly salted boiling water until tender, about 15 minutes. Drain and cool.





    Melt butter in large nonstick skillet over medium heat. Mix in apple butter, sugar and salt. Add sweet potatoes. Cook over medium-low heat until heated through, gently stirring often. Turn into serving bowl. Sprinkle with pecans. Serves 8.

    APRICOT GLAZED SWEET POTATOES





    2 1/2 lb. sweet potatoes, cooked, peeled mashed


    3 eggs, beaten


    1/4 c. honey


    1/4 c. melted butter


    1 or 2 tbsp. brandy, optional


    1 pinch cinnamon


    1 pinch ginger


    1 pinch nutmeg


    Season to taste





    TOPPING:





    1/4 c. butter


    1/4 c. apricot jam (made with honey)


    1 1 2/ tsp. cinnamon


    3/4 c. coarsely chopped pecans





    Place sweet potatoes, eggs, honey, melted butter, cinnamon, ginger, nugmeg and season in a bowl. Mix with a wooden spoon or an electric beater until smooth. Turn sweet potatoes into a decorative baking dish. Cover and bake in a preheated 350 degree oven for 40 minutes. Place butter and apricot jam in a sauce pan and heat until melted. Sprinkle pecans over sweet potatoes and pour apricot jam over the top. Broil until topping is bubbly and glazed.
    Bake or microwave the potato - top with melted butter, sauted sliced mushrooms, avocado, and grated cheese (of your choice), broil to melt the cheese - then top with sour cream.





    This is a vegetarian main course - it has protein from the cheese and sour cream. But it is not low fat - just good!





    For low fat, eliminate the butter and use lite sour cream and cheese.

    Louisiana Candied Yams Recipe





    Ingredients


    1/4 cup butter


    1/2 cup Steen's Cane Syrup


    1 15oz. can Bruce's Louisiana Yams

    Being on a diet, I don't suggest any of these recipes. If your going to fry them use olive oil. But mashing might be best.
    Mash them w/ a little butter, milk and brown sugar. Yummy!

    4 pounds sweet potatoes, pared and sliced


    1 1/2 cups sugar


    2 eggs


    1/2 cup raisins


    Grated rind and juice of 1 lemon


    1/2 teaspoon cinnamon


    1/2 teaspoon nutmeg


    1/2 cup evaporated milk


    1/2 cup chopped pecans


    1/2 cup butter or margarine, melted


    1/2 cup shredded coconut


    Miniature marshmallows











    Place the potatoes in a pot and add enough salted water to cover. Cook until tender. Drain. Preheat the oven to 350掳F. Mash and whip the potatoes. Add the remaining ingredients (except marshmallows) and mix well. Pour into a greased casserole dish. Bake for 30 minutes. Remove from the oven and cover with marshmallows. Return to the oven and continue cooking until brown.

    6 sweet potatoes


    1 cup white sugar


    1/2 cup milk

    DIRECTIONS


    In a large stockpot, cover sweet potatoes with 1 inch of water; boil for 20 minutes, or until fork tender. Drain, allow to cool and remove skins.


    Preheat oven to 350 degrees F (175 degrees C). Grease or butter one 2 quart casserole dish.


    Place potatoes in a mixing bowl and with an electric mixer, beat on low speed until potatoes begin to break up. Increase speed to medium high and blend until smooth.


    Reduce speed to low and add sugar, milk, butter, vanilla, eggs and salt. Mix well.


    Allow any potato 'fibers' to remain on the beater and remove. Pour sweet potato mixture into the casserole dish.
