INGREDIENTS:

TOPPING:

PREPARATION:
Preheat Oven to 350 Degrees
Butter Baking Dish
1)Scrub sweet potatoes and cut in half if large.
2)Boil in their jackets until tender. 25 鈥?35 minutes (until can be easily pierced with fork)
3)Cool; slip the peels off and mash well.
4)Stir in sugar and salt.
5)Whisk together the milk, vanilla, and 4 tablespoons melted butter. Taste. Then add Eggs (Slightly Beaten)
6)Stir into the mashed sweet potato mixture until smooth and well blended.
7)Spoon the mixture into a lightly buttered 2-quart baking dish.
8)Combine topping ingredients (brown sugar, flour, butter, pecans)
9)Cut butter into flour and sugar to make crumbly.
10)Sprinkle over the sweet potato mixture. Bake at 350掳 for 25 minutes.

Roasted sweet potatoes
Toss 1 dices sweet potatoes with 3 tbs of olive oil, 2 tbs fresh rosemary and salt and pepper. Sprinkle 2 tbs of brown sugar over.

Delicious Sweet Potato Pie Recipe
Sweet potatoes were another staple I
grew up with. They were fairly inexpensive
and were great baked or put in a pie. Baked
potateos were just eaten with a little butter.
To make a potato pie, you need:
4 large potatoes
2 cups sugar
1 stick butter
1 pinch cinnamon
1 pinch nutmeg
1 store-bought pie crust
or your can just line a pan with vanilla wafers
instead
1/2 cup milk
Boil the potatoes until tender. When you stick a
fork in them it should go in easy but you don't
want them to fall apart.
Let the potatoes cool and then peel them.
Put the potatoes in a large mixing bowl and
mash them thoroughly with a potatoe masher.
Melt the butter and pour it and the other
ingredients in the bowl of potatoes. Stir
until well mixed.
Whether you used a ready made pie crust or
just cookies, pour the potatoes mixture
into the crust.
Put into an oven preheated to 375 degrees.
Cook for about 35-40 minutes or until a toothpick
inserted in the center comes out dry.
I like to eat the pie while still hot. It's
good cold too though.
If you want you can make a meringue topping by
blending confectionary sugar with egg whites.
After the pie is almost done, spread the
meringue thinly across the top. Continue baking
until the meringue turns light brown. If you
use the meiangue, you can add the egg yokes
to the pie if you like.

Sweet Potato Croquettes
INGREDIENTS:
* 2 cups mashed sweet potatoes, about 4 medium sweet potatoes
* 2 tablespoons butter
* 1 teaspoon salt
* 1/4 teaspoon ground black pepper
* 2 tablespoons brown sugar
* fine dry bread crumbs, plain
* 1 egg, slightly beaten
* 1 tablespoon water
* oil for deep frying
PREPARATION:
Combine mashed sweet potatoes, butter, salt, pepper, and brown sugar; beat until smooth and well blended. Chill thoroughly. Shape chilled mixture into croquettes. Mix slightly beaten egg with water. Dip sweet potato croquettes into crumbs, then into beaten egg mixture, then in crumbs again.
Fry in hot deep fat, about 370掳, until sweet potato croquettes are golden brown. Drain well.
Sweet Potato Croquettes!
Make sweet mashed, add Parmesan cheese and egg to the recipe. This will make them a bit thicker. Scoop into balls. Freeze for a while. When hard take them out and bread them. Flour, egg wash and bread crumbs. I find that Panko crumbs work best! (Japanese bread crumbs) Deep fry them or pan fry. They are crispy on the outside, warm and soft on the inside!! SOOOOOO GOOOD!! ENJOY!
Cinnamon Sweet Potato Chips
INGREDIENTS
2 sweet potatoes, peeled and thinly sliced
1 tablespoon melted butter
1/2 teaspoon salt
2 teaspoons brown sugar
1/2 teaspoon ground cinnamon
DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C). Grease two baking sheets.
Arrange sweet potato slices in a single layer onto baking sheets. Stir together butter, salt, brown sugar, and cinnamon in a small bowl; brush onto sweet potato slices.
Bake in preheated oven until edges curl upwards, about 20 to 25 minutes
I like to stick it in the oven and slice it open and put on a little brown sugar.
GRILLED SWEET POTATO AND MANGO SALAD
The following is an excerpt from the book Grill! by Pippa Cuthbert %26amp; Lindsay Cameron Wilson.
A sweet, succulent and refreshing salad.
1 sweet potato, peeled
1 large mango, skin removed
For the dressing:
3 Tbsp olive oil
4 Tbsp fresh mint, chopped
Juice of 1 lime
1 tsp grated lime rind
1 Tbsp rice wine vinegar
陆 tsp extra-fine sugar
Sea salt and pepper, to taste

1 head Bibb or Boston (round) lettuce
陆 cup (10g) fresh mint
Preheat the grill or grill pan to medium.
Chop both the sweet potato and mango flesh into long wedges, about 戮-in (2cm) wide, 陆-in (1 cm) thick. Place in separate dishes.
Combine the dressing ingredients in a small bowl and pour half over the mango and potato.
With tongs in hand, arrange sweet potato wedges directly over the grill and leave for 6-8 minutes, until grill marks appear and the bottom sides begin to soften. Turn and grill the other side for a further 6 minutes. While the other sides are cooking, arrange the mango wedges directly on the grill. Grill for about 2-3 minutes on each side. Transfer all the wedges to a cutting board and cut into cubes. Place them in a bowl and toss with the remaining dressing.
Arrange lettuce leaves on salad plates. Scatter the sweet potato and mango over the lettuce and add a sprinkling of sea salt and finely sliced mint.
Serves 4-6.
FRIED SWEET POTATOES
1 medium sweet potatoe
nutmeg
cinnamon
sugar
butter or oil
Chop sweet potatoes into thin slices. Then cut each slice into fours. Place in heated and greased pan. Sprinkle cinnamon, nutmeg, and sugar on top.
Cook for 5-7 minutes. Then turn them over and cook for another 5 minutes. Delicious!
