Any body got a really good recipe for sweet potato?

I have fancied tring sweet potaot but other than mash I can't find any other recipes for it please helpAny body got a really good recipe for sweet potato?
Sweet Potato Pie


* 2 9'; prepared deep-dish pie crusts, unbaked


* Filling: 3 eggs, 1 cup sugar, 2 3/4 cups well-mashed, cooked sweet potatoes, 2 1/4 cups evaporated milk , 1/2 cup butter , 3/4 teaspoon salt, 1 1/2 teaspoons ground cinnamon, 3/4 teaspoon ground ginger, 1/2 teaspoon ground cloves


- Heat oven to 350 degrees (F).





- Mix together all ';filling'; ingredients in a large bowl.





- Fill pie crusts to within 1/4'; of top with filling.





- Bake for 1 hour, or until knife inserted into center of pies comes out clean.





- Cool on wire rack and then in refrigerator untill chilled.





- Serve with whipped cream, if desired.














* Makes 8 servings per pie.








Sweet Potato Supreme


* 1/2 cup brown sugar


* 1 teaspoon salt


* 1/2 cup crushed pineapple


* 1 (17 oz) can sweet potatoes, sliced


* 1/2 cup sherry or pineapple juice


* 1/4 cup miniature marshmallows


Preheat oven to 370 derees F. Use a 9x9 inch baking dish. Combine brown sugar, salt, and pineapple. Arrange potatoes and pineapple mixture in alternate layers in baking dish ending with pineapple mixture. Pour wine or juice over all and bake for 35 minutes. Sprinkle marshmallows on top, if desired, and bake for 10 minutes or until brown.








Sweet Potato Soup


Serves 6


500 g/1 lb white sweet potatoes, peeled and sliced


salt


50 g/2 oz butter


1 medium onion, finely chopped


500g/1lb tomatoes, blanched, skinned and chopped


2 small, fresh red or green hot chillies, seeded and chopped,


or Tabasco sauce to taste


1 L/13/4 pints Chicken stock


2 tablespoons chopped fresh parsley or coriander





1 Put the sweet potato slices into a saucepan with salted water to cover. Bring to the boil, lower the heat and cook, covered, for about 20 minutes or until tender. Drain and chop them coarsely.





2 Melt the butter in a frying-pan over low heat and saute the onion until soft. Add the tomatoes and chillies or Tabasco sauce and cook for 5 minutes more. Puree the mixture with the sweet potatoes and 225 ml/8 fl oz of the chicken stock in a blender.





3 Transfer the puree to a saucepan.


Stir in the rest of the stock. Taste for seasoning and add salt if necessary. Simmer over low heat for 2 minutes to blend the flavours.





4 Pour the soup into a warmed tureen or divide among 6 warmed individual soup bowls and sprinkle with parsley or coriander. Serve at once.








Gourmet Sweet Potatoes


* 1 serving(s) cooking spray (5 one second sprays), butter-flavored


* 2 tbsp half-and-half cream


* 5 large sweet potato(es), peeled, quartered, boiled and mashed


* 1/2 cup(s) packed light brown sugar


* 2 tbsp reduced-calorie margarine


* 1/2 cup(s) pecan halves, finely chopped (about 2 ounces)


* 1/2 cup(s) fat-free egg substitute


* 1 tsp vanilla extract


* 1/2 tsp ground cinnamon


* 1/2 cup(s) sugar


* 1/4 tsp table salt


- Preheat oven to 350掳F. Coat a 13 X 9-inch baking dish with cooking spray.





- In a large bowl, mix together potatoes, margarine, egg


substitute, vanilla, cinnamon, granulated sugar, salt and half-and-half. In a small bowl, mix together brown sugar and pecans.





- Pour potato mixture into prepared baking dish. Sprinkle top with brown sugar-pecan mixture. Spray top of casserole with cooking spray. Bake for 30 minutes or until heated through.

Roasted with garlic and thyme
Roast it or bake it. Mash it with swede and carrots and perhaps parsnips too - that's lovely. Another good recipe is one I've adapted from Sainsbury's - roast butternut squash, sweet potatoes with panchetta, fresh sage and chestnuts - sometimes I also add cherry tomatoes on the vine to roast - now that is a very nice tasty meal.
grate the sweet pot, and grate an onion and some cheese, mix together well and fry it in a frying pan like a rossti. it is lovely.

Boil, Bake, Roast, Wedge's, Fries. Add to casseroles and stews.





Almost anyway you cook a spud will do, except it will be considerably sweeter.
I know you said you didn't want mash but if you haven't, do try sweet potato and coriander mash - it's lovely and adds another dimension rather than plain sweet potato!





Otherwise try roasting it with Butternut Squash, red peppers and red onions, then either leave these chunky to have as veg with something, or blend them all together to create really lovely potato cakes which can then be either grilled or dry-fried if you want to stay healthy!

2 pts chicken stock


pinch if Cayenne pepper 1/2 tsp paprika [ toasted]

Hot oven 200c gas mark4


Spuds into roasting pan drizzle with oil season with S%26amp;P, bake for 20mins.


Add garlic %26amp; chilli bake for another 15mins.


Peel garlic %26amp; wiz the roasted ingrdients with 1pt of stock %26amp; spices.


Reheat soup adding any of the extra stock to your liking.

Found that if left for next day it becomes very hot to taste.


Lovely with crispy bread.
This is one that I tried and surprisngly really enjoyed. I am not a real fan of sweet potatoes, but make them for my husband. Try this recipe. If all else fails, buy a can of sweet potatoes and follow the recipe on the back.








Grilled Sweet Potatoes with Apples





INGREDIENTS


* 2 large sweet potatoes, sliced


* 1 apple - peeled, cored and thinly sliced


* ground cinnamon to taste


* white sugar to taste


* 1/2 cup butter





DIRECTIONS


1. Preheat an outdoor grill.


2. In a bowl, toss the sweet potato and apple slices with the cinnamon and sugar. Divide the mixture into 4 portions, places each on a large piece of aluminum foil. Top each with an equal amount of butter. Tightly seal foil around each portion.


3. Place foil packets on the grill, and cook 40 minutes, turning every 5 to 10 minutes, until potatoes and apples are tender.

Sweet Potato-Pecan Pie:

1 pie crust, unbaked (9 inch)





Filling:


1 large egg


1 1/2 cups fresh sweet potatoes, mashed cooked


1/4 cup sugar


2 tablespoons unsalted butter or margarine, softened 1 teaspoon vanilla extract


1/4 teaspoon salt


1/4 teaspoon cinnamon, ground


1/8 teaspoon allspice, ground


1/8 teaspoon nutmeg, ground


Pecan Topping


2 large eggs


1/2 cup sugar


1/2 cup dark corn syrup


2 tablespoons unsalted butter or margarine, melted


1 teaspoon vanilla extract


1 dash cinnamon, ground


1 cup pecan halves


1/2 cup heavy cream, whipped stiff Prepare pie shell;set aside





1. Make sweet potato filling: In med.


2. bowl, with electric mixer, beat 1 egg until frothy.


3. Add all the remaining filling ingredients; beat at med.


4. speed until the mixture is smooth, about 2 min.


5. Make pecan topping: In med.


6. bowl, with mixer, beat eggs until frothy.


7. Add sugar, corn syrup, melted butter, vanilla and cinnamon.


8. Beat at low speed just until mixture is well blended, about 1 min.


9. Stir in pecans.


10. Oven to 350 degrees.


11. To assemble: turn sweet potato filling unbaked pie shell, spreading evenly.


12. Pour pecan topping over top.


13. Bake 60-70 min., until set and knife inserted in center comes out clean.


14. Remove pie to rack to cool.


15. Just before serving, decorate with whipped cream.
I love sweet potatoes! I bake them in the oven and then eat them just as I would a regular baked potato, sour cream, butter, chives, bacon bits, salt and pepper. I make an entire meal out of the sweet potato. Enjoy!

if you are not too worried about your diet, try this.


Grate the sweet potato like you would cheese.


place a little butter in a frying pan and heat until melted


Add the shredded sweet potato and simmer gently on low heat turning occasionally until it is soft.





Serve like a rosti. very tasty and very rich
i put olive oil and add pepper put them in the oven and they come out great simle but very tasty i some times put brown sugar but i find it taste great without. try it.
Bake it and put butter and brown sugar on it. Nothing is better.
