Does anyone have a recipe for sweet potato casserole?

3 cups cooked,mashed sweet potatoes (I use canned)


1 cup sugar


1/2 cup plus 3 T. butter melted and divided


2 eggs, beaten


1 t. vanilla extract


1/3 cup milk


1 t. cinnamon


1/2 cup packed brown sugar


1/2 cup chopped pecans


1/4 cup all purpose flour


Combine sweet potatoes,sugar,1/2 cup butter,eggs, vanilla, and milk, mix well. Put into a greased 2 quart baking dish.


Combine remaining butter, cinnamon, brown sugar, flour and pecans together. Sprinkle mixture over sweet potatoes. Bake at 350 degrees for 25 minutes or until bubbly.





I make this every year, and it is very easy to double the recipe if you need more.Does anyone have a recipe for sweet potato casserole?
Spiced Sweet Potato Casserole





3 lbs Sweet Potatoes


1/3 cup packed brown sugar


2 tbsp butter


2 tbsp orange juice concentrate (I'm using frozen)


1 1/2 tsp Cinnamon


1/2 tsp salt


1/2 tsp ground nutmeg


2 large eggs


1/4 cup chopped pecans





Pierce potatoes with a fork and arrange in a circle on paper towels. Microwave 16 minutes, rearranging at 8 min (outsides pointed in). Once tender, cut each potato in half and scoop out pulp into a bowl. Discard skins. Add sugar, butter, orange juice concentrate, cinnamon, salt and nutmeg. Beat until combined. Add eggs and beat once again until smooth. Spoon into 1 1/2 qt. baking dish, sprinkle with pecans. Bake at 350 degrees F for 45 minutes or until heated.Does anyone have a recipe for sweet potato casserole?

Sweet Potato Casserole


If you wish you may prepare this recipe the day before and refrigerate instead of baking. Bake it before dinner, increasing the baking time.


2 large sweet potatoes ( 2 lbs.)


3 eggs, beaten


1/4 cup melted butter


2/3 cup evaporated milk or cream


Topping:


3/4 cup coarsely chopped pecans


1/2 cup brown sugar


1/4 cup flour


2 tablespoons melted butter


Peel and cut up the sweet potatoes. Boil for about 25 minutes, until tender. Drain well and mash.Stir in eggs, butter and evaporated milk. Spoon into a 2 litre baking dish.Combine the topping ingredients, and sprinkle evenly over the sweet potatoes.Bake at 350 degrees F for 40 minutes, until center is set.
My favorite recipe came from my mother-in-law in Alabama.





Boil sweet potatoes in their skin until they get soft. Peel the skin and place the remaining potato in a large bowl. I use about 5-6 potatoes. Mash the potatos using some butter. Flaked coconut can be added to the mashed potatos for extra texture and flavor. Spray a glass casserole dish and place the mashed potatos in the dish, spreading the potatos evenly.





For the top crumble brown sugar, small pecan pieces, coconut and butter together. Use the measurements you like. Cover the potatoes and bake about 30 minutes.
