Does anyone have a good sweet potato pudding recipe?

INGREDIENTS:





* 2 eggs, separated, room temperature


* 1/4 cup butter or margarine


* 1/2 cup firmly packed light brown sugar


* 1/4 cup milk


* 1/2 teaspoon salt


* 1/2 teaspoon ground cinnamon


* 1/4 teaspoon ground nutmeg


* dash ground ginger


* 1 cup mashed cooked sweet potatoes





PREPARATION:


In a medium mixing bowl, beat egg whites until stiff peaks form. Beat yolks in a separate bowl. In a mixing bowl, cream together butter and sugar; add well-beaten egg yolks, milk, salt, nutmeg, cinnamon, ginger, and sweet potatoes. Fold in beaten egg whites. Turn mixture into a buttered 1 1/2-quart casserole. Bake at 350掳 for 40 minutes. Serve with cream or a caramel sauce. Serves 4.Does anyone have a good sweet potato pudding recipe?
Not pudding but an awesome pie recipe! Take 2 lg.cans of sweet potatoes and mash with melted butter and a brown sugar. Take brown sugar and plain oatmeal and make a mixture, set aside. Spread mashed sweet potatoe mixture in a casserole dish and sprinkle the sugar mixture (fully covering it) over the top then cover with small marshmallows. Bake at 300'; in oven until the marshmallows are slightly browned. MMM Yummy!

Sweet potato pudding recipe baked in a casserole.


INGREDIENTS:

1/4 teaspoon ground cinnamon


1/8 teaspoon ground ginger


1 cup mashed cooked sweet potatoes


cream or Caramel Sauce (link below)

2 1/2 cups baked sweet potatoes pulp, scooped from the skin


1/2 cup packed light or dark brown sugar


4 large eggs


1/3 cup milk


2 tablespoons unsalted butter, melted


2 tablespoons pure vanilla extract


1 tablespoon corn syrup, preferably dark


1 tablespoon light or dark rum


1/2 teaspoon salt


1/2 teaspoon ground cinnamon


1/2 teaspoon ground ginger


Praline topping, recipe follows





Preheat the oven to 350 degrees F. Grease a 1 1/2-quart baking dish.


With an electric mixer, beat together all the pudding ingredients until smooth and light. Pour the pudding into the baking dish. Transfer to the oven and bake for 25 minutes.





Sprinkle the praline mixture over the pudding and bake for an additional 20 to 25 minutes, until the pudding is set and slightly puffed. The top will sink as the pudding cools. Serve warm or at room temperature.








Praline Topping:


1/2 cup chopped pecans


1/4 cup chopped crystallized ginger


1/4 cup packed light or dark brown sugar


2 tablespoons unsalted butter, softened





In a small bowl, combine the ingredients and reserve to use as topping for the sweet potato pudding.








The ingredients below are given in approximate quantities, for this is a recipe that must be doctored up along the way. When the pudding has cooked for about 30 minutes, you will have to stir it around to add a little more water, and lick the spoon. At this point decide what extra spices are needed and add them. You may add more Karo syrup or butter as well as spices. Repeat as often as you wish. Generally it takes about an hour and a half for the pudding to bake thoroughly and bubble up.





Ingredients





3 or 4 large, orange Jewel sweet potatoes


1/2 tsp. cinnamon


1/4 tsp. ground nutmeg


1/4 tsp. allspice


1/4 tsp. ginger


1/4 tsp. cloves


1 c. water


1 or 2 cinnamon sticks


1/2 c. (1 stick) butter or margarine


1/2 c. Karo (corn) syrup


1/2 c. brown sugar


pinch salt





Directions





While grating sweet potatoes, bring to a slow boil 1/2 tsp. cinnamon, ground nutmeg, allspice, ginger, and cloves in 1 cup of water. (Add cinnamon sticks for additional cinnamon flavor.)





Put the sweet potatoes into a large mixing bowl. Just before removing the pot of spices from the stove, add butter or margarine, Karo syrup, brown sugar, and salt. Stir while the butter melts. Remove the cinnamon sticks.





Pour this mixture over the grated sweet potatoes. Blend well together. Put in a well-buttered casserole dish and place in a preheated 350 degrees oven.





At this point start another cup of water and spices on the stove top, keeping them ready to add as needed, and the whole house Christmasy smelling!
