Sweet Potato Recipes?

Fast , Easy %26amp; Kid Friendly please .


I have 2 medium - large sized potatoes.


I am new to this ( sweet potatoes ) so simple recipes .

I just clean them slice them length wise and put butter and brown sugar on them put them back together wrap them in foil and bake themSweet Potato Recipes?
Kings Arms Tavern Sweet Potatoes





3-pounds sweet potatoes


戮-cup light brown sugar, packed divided


3-tablespoons butter


5 teaspoons cinnamon


陆-teaspoon nutmeg


录-teaspoon salt


1-cup milk





Preheat oven to 400潞


Grease 1陆 quart casserole


Cook sweet potatoes in boiling salted water until done; drain peel and mash them.





Stir in all the remaining ingredients except 2 tablespoons of sugar.





Turn the mixture in to prepared casserole and sprinkle with remaining sugar.





Bake at 400潞 for 30 minutes.
I like to whip them like they are mashed potatoes...





Boil them until soft enough to whip. Add some milk and butter, plenty of brown sugar and honey for a little bit of sweetness, and top will marshmellow fluff if you have it! That is the only way I'll EVER eat sweet potatoes, and they are marvelous!
INGREDIENTS


2 sweet potatoes, cooked and peeled (I cubed them, coated them in a little olive oil and baked them in a 400 degree oven for about 35 minutes...which made them crispy up to that point)


1/2 cup packed brown sugar


2 tablespoons butter or margarine


2 tablespoons water


1/4 teaspoon salt


1 dash ground nutmeg or ground mace





DIRECTIONS


Slice sweet potatoes into an 8-in. pie plate; set aside. In a saucepan, combine brown sugar, butter, water and salt; bring to a boil. Pour hot syrup over potatoes. Bake, uncovered, at 350 degrees F for 30 minutes, basting occasionally, or until syrup thickens and potatoes are glazed. Sprinkle with nutmeg or mace.
heres a cool one for kids... sweet potato french fries. uses any amount of taters and very unique.just slice into fries and fry in skillet.
CANDIED SWEET POTATOES





2 pounds sweet potatoes, cut into 1/2'; slices


1/2 cup packed brown sugar


3 tablespoons butter


3 tablespoons water


1/2 teaspoon salt





Wash sweet potatoes but do not pare. Heat enough salted water to cover potatoes to boiling. Add potatoes. Cover and heat to boiling. Cook until tender, 30 to 35 minutes; drain. Slip off skins.


Mix brown sugar, butter, water and salt in 8-inch skillet. Cook over medium heat, stirring constantly, until smooth and bubbly. Add sweet potato slices; stir gently until glazed and heated through.





YANKEE SWEET POTATO CASSEROLE





1 can pineapple slices


2 lg. cans sweet potatoes or yams


3 tbsp. butter


1/2 c. maple syrup


Cinnamon


Mace


Miniature marshmallows





Spray baking dish with Pam. Drain liquids from pineapple and sweet potatoes. Reserve 2 slices of pineapple for top. Slice up sweet potatoes. Line sides of 8';x8'; baking dish or 3 quart casserole dish with pineapple and pour sweet potatoes into dish. Sprinkle cinnamon and mace over sweet potatoes. Pat with butter. Put extra slices of pineapple on top. Pour maple syrup over mixture. Bake for about 30 minutes at 325 degrees.


Put a layer of miniature marshmallows over top of hot mixture. Place back in oven and bake until top of marshmallows has turned golden brown. This casserole can also be prepared in a microwave oven except for the browning of the marshmallows. Check your microwave directions for cooking time. to brown the marshmallows, heat oven to 425 degrees and cook for approximately 8 to 10 minutes, or until marshmallows are toasty or golden brown.
