Cajun Style Sweet Potatoes
INGREDIENTS
1 1/2 teaspoons paprika
1 teaspoon brown sugar
1/4 teaspoon black pepper
1/4 teaspoon onion powder
1/4 teaspoon dried thyme
1/4 teaspoon dried rosemary
1/4 teaspoon garlic powder
1/8 teaspoon cayenne pepper
2 large sweet potatoes
1 1/2 teaspoons olive oil
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C).
In a small bowl, stir together paprika, brown sugar, black pepper, onion powder, thyme, rosemary, garlic powder, and cayenne pepper.
Slice the sweet potatoes in half lengthwise. Brush each half with olive oil. Rub the seasoning mix over the cut surface of each half. Place sweet potatoes on a baking sheet, or in a shallow pan.

French Fries - Not!
Don't deep fry potatoes in all that oil--bake them for your toddler instead!
Cut up 2 or 3 potatoes into quarters, eighths, or French fry shapes. You can peel them if you wish, but remember that the peels have lots of nutrients.
Put the cut-up potatoes in a bowl and toss them with melted butter. Use only about 1 teaspoon of melted butter for each potato. (Or save washing a big bowl and brush them with melted butter instead.)
Spread potatoes on a cookie sheet sprayed with non-stick cooking spray. Bake in pre-heated 400 oven for 20 minutes or until browned.
Variations: Sprinkle some Parmesan cheese and/or parsley on those fries before they go into the oven--delicious! Or use sweet potatoes instead of white potatoes for an extra jolt of vitamin A.Any sweet potato recipes that are savoury rather than sweet?
Here in the Bahamas they make something called ';cut-up';
Basically, chop cabbage as you would for coleslaw and add sliced raw sweet potatoes, diced fresh tomatoes, onion, bell pepper, etc.
They use something called a ';sour orange'; but the Original SunnyD can be used. Lots of salt and pepper.
This is their version of coleslaw, and they love it.
My wife will cut up just raw sweet potato and eat it with dip or put some ';sour'; on it.
To each his own. I'm not Bahamian, she is.
Just sprinkle some interesting herbs over your cubed cooked sweet potatoes and pour a bit of melted butter over them and toss.
My husband likes sweet potatoes baked with butter, salt and pepper on them. He hates the sweet dessert ones.
Try some mashed sweet potatoes. You can cook it just like the white potatoes.
