Baked Stuffed Sweet Potatoes
Whole sweet potatoes are baked then stuffed with a little pineapple and a whole marshmallow then baked a little longer.
INGREDIENTS:
4 medium sweet potatoes
1 tablespoon butter
1/2 teaspoon salt
1 tablespoon milk
1 can (8 ounces) crushed pineapple, drained and reserve liquid
6 marshmallows

PREPARATION:
Bake sweet potatoes at 450掳 until soft. Cut each sweet potato in half lengthwise and scoop out potato, leaving shell intact. Mash sweet potatoes with butter, salt and milk, along with 1/2 cup crushed pineapple. Add a little more milk or butter if necessary. Fill sweet potato shells. Slice marshmallows in half and top each sweet potato with two halves. Top with a spoonful of crushed pineapple. Put reserved pineapple syrup or juice in a saucepan and bring to a boil. Drizzle each sweet potato with a little of the juice. Place sweet potatoes under broiler and broil until browned.
Serves 4 to 6.
Mashed Sweet Potatoes with Honey:
Sweet potatoes are cooked and mashed with honey, brown sugar, butter, and milk, then baked in the oven with marshmallows.
INGREDIENTS:
2 cups warm mashed sweet potatoes
1/4 teaspoon salt
1 tablespoon light brown sugar
2 tablespoons honey
2 tablespoons butter
1/2 cup milk
1 cup miniature marshmallows
PREPARATION:
Blend sweet potatoes, salt, brown sugar, honey, butter, and milk. Spoon into a buttered 1-quart casserole. Top with marshmallows. Bake at 350掳 until marshmallows are browned.
Serves 4.

2 medium sweet potatoes
ice water
oil for deep frying

Peel potatoes; cut in half lengthwise then slice very thin with mandoline, slicer attachment of food processor, or knife. Place slices in a medium bowl and cover with ice water; chill for 1 hour.
Lift from water and drain on paper towels.
Heat oil to about 375掳 in deep fryer or about 1 inch deep in an electric skillet or deep skillet on stovetop. Fry potato slices in one-layer batches for a minute or two, or until golden brown. Lift chips out with slotted spoon and drain on paper towels. Sprinkle sweet potato chips with salt before serving.
Sweet Potato Croquettes:
Sweet potato croquettes are made with sweet potatoes and butter and egg, then deep fried.
INGREDIENTS:
2 cups mashed sweet potatoes, about 4 medium sweet potatoes
2 tablespoons butter
1 teaspoon salt
1/4 teaspoon ground black pepper
2 tablespoons brown sugar
fine dry bread crumbs, plain
1 egg, slightly beaten
1 tablespoon water
oil for deep frying
PREPARATION:
Combine mashed sweet potatoes, butter, salt, pepper, and brown sugar; beat until smooth and well blended. Chill thoroughly. Shape chilled mixture into croquettes. Mix slightly beaten egg with water. Dip sweet potato croquettes into crumbs, then into beaten egg mixture, then in crumbs again. Fry in hot deep fat, about 370掳, until sweet potato croquettes are golden brown. Drain well. Recipe for sweet potato croquettes serves 4.
Crunchy Sweet Potato Casserole:
This sweet potato casserole recipe is made with marshmallows and chopped peanuts.
INGREDIENTS:
3 cups cooked riced sweet potatoes
2 tablespoons butter
1/2 cup warm milk
1/2 teaspoon salt
miniature marshmallows
1/2 cup chopped peanuts
PREPARATION:
Add butter and salt to warm milk; stir until butter is melted. Blend with potatoes; beat until light and fluffy. Add more milk, if needed. Pile potatoes into a buttered casserole. Preheat oven to 375掳.
Bake casserole 20 minutes. Generously top with miniature marshmallows and chopped peanuts. Return to oven and heat until marshmallows are lightly browned.
Sweet Potato Casserole serves 6 to 8.

Honey-Lime Sweet Potatoes
Serving Size : 6
6 sweet potatoes, peeled and cut crosswise into slices 1/2 inch thick
Melted unsalted butter for brushing, plus 2 Tbs. butter
1/2 cup honey, at room temperature
1/4 cup fresh lime juice
Salt and freshly ground pepper, to taste
Bring a saucepan three-fourths full of water to a boil over high heat. Add the sweet potato slices and boil for 10 minutes. Drain and let cool.
Prepare a charcoal or gas grill for direct grilling over medium-high heat. Brush the potato slices with the melted butter.
Grill the potato slices over the hottest part of a charcoal fire or directly over the heat elements of a gas grill, turning once, until fork-tender, 4 to 5 minutes per side.
Meanwhile, in a small saucepan over low heat, mix the honey and lime juice until smooth. Add the 2 Tbs. butter and stir until melted. Season with salt and pepper. Brush the sweet potatoes on both sides with the glaze and grill them briefly, turning once, about 30 seconds per side. Serve hot.

Sweet Potatoes in Orange Cups
6 sweet potatoes, unpeeled
1/2 stick butter, softened
1/4 cup orange juice
1/4 cup chopped pecans
6 large oranges (heavy for their size)
48 mini-marshmallows
Preheat oven to 375 degrees F.
Cover sweet potatoes with cold water in a pot and boil until fork tender. Peel the potatoes, transfer to a bowl, and mash. Stir in butter, orange juice, and pecans and mix until incorporated.
For the orange shells, cut each orange in half and scoop out the pulp using a small knife or grapefruit spoon. Reserve the pulp for another use. Fill each orange shell with the potato mixture and top off with the marshmallows. Bake until hot and the marshmallows are melted.

SCALLOPED SWEET POTATO CASSEROLE
6 medium sweet potatoes
2 medium onions
2 tablespoons vegetable oil
salt
2 tablespoons butter
2 tablespoons all-purpose flour
3/4 teaspoon ground ginger
1/4 teaspoon pepper
2 cups milk
2 tablespoons chopped parsley
In 5-quart saucepot over high heat, heat unpeeled sweet potatoes and enough water to over to boiling. Reduce heat to low; cover and simmer until sweet potatoes are just fork-tender but not soft, about 20 minutes; drain. Cool sweet potatoes until easy to handle.
Meanwhile, slice onions 1/4 inch thick. In 12-inch skillet over medium-high heat, in hot vegetable oil, cook onions and 1/4 teaspoon salt until tender, stirring occasionally.
Preheat oven to 375掳F. Grease 13'; by 9'; baking dish. Peel sweet potatoes and cut into 1/4-inch thick slices. In bottom of baking dish, arrange one-third of sweet potatoes; sprinkle with half of onions. Place half of remaining sweet potatoes over onion layer, then top with remaining onions.
Arrange remaining sweet potatoes over onions.
In 1-quart saucepan over medium heat, melt butter; stir in flour, ginger, pepper, and 1 teaspoon salt until blended; cook 1 minute.
Gradually stir in milk; cook, stirring constantly, until sauce boils and thickens slightly.
Pour sauce over potatoes in baking dish; sprinkle with parsley. Bake 30 minutes or until sauce is bubbly and mixture is heated through. If you like, broil 1 minute to brown top of potatoes slightly. Makes 6 accompaniment servings.
Cut them up into strips, brush with olive oil, and bake them in the oven just like fries!
How about mashed potatoes too, substitute the sweet potato with the regular. It's mainly just a difference in taste and texture, but still equally good in their own ways.
thing i know is to bake like you would any other potato...then and lots of butta and sprinkle with cinnamon(i like lots of it) some folks also add sugar to thier cinnamon....try ....enjoy
Try throwing them on the grill. It will add a great flavor to them. You can slice them up and put them in foil packets with other seasonings and flavors, like onion and thyme. It's fun, and really easy to clean.
Sweet potatoes and apples. Just get 4 or 5 sweet potatoes and boil them until you can stick a fork in them and they are soft. Run cold water over the sweet potatoes and then the skins will basically fall off. Be sure to get all the skin off of the potatoes and then cut them into fairly large chunks. Transfer the sweet potatoes to a baking dish.
Preheat oven to 350 degrees
Core several apples. (I have had better luck with Granny Smith apples.) Cut apples into medium sized chunks. (If you want softer apples, quickly cook on the stovetop with some butter.) Add to the baking dish.
Now here's where I always go a little over board, so adjust as you need to. Melt a stick of butter and then add a bunch of brown sugar and cinnamon and mix thoroughly. Spread evenly over the potatoes and apples. Put into the oven for 15-30 minutes. Apples and potatoes should be slightly brown. TASTES DELICIOUS!!! (Sorry that the recipe isn't exact, but it truly is very hard to mess this one up!)

Company Sweet Potatoes
3 c. mashed sweet potatoes
1/2 c. milk
2 eggs
1 c. sugar
1/3 c. butter or margarine
1 tsp. vanilla
Combine all ingredients and pour into baking dish.
Top with the following:
1 c. coconut
1 c. brown sugar
1/3 c. melted butter or margarine
1 c. chopped nuts
1/3 c. flour
Blend coconut, nuts, brown sugar and flour; then, add the melted butter. Sprinkle over the potatoes. Bake at 375' until brown - about 25 minutes.
