You can't make yams from sweet potatoes, one answer could almost be misleading.
You can poke holes in them and bake (they take a little longer than reg potatoes). Most folks don't eat the skin, add butter and salt or butter and cinnamon sugar or butter and brown sugar.
You can sweet potatoes fries, using a potato that has been baked but is still a little hard when you squeeze it. Remove from the oven and cool, then peel it and slice into fry sizes. I like mine with ketchup and salt. Be careful when you fry sweet potatoes in anyway as they burn easy becuase of the natural sugars, also if they get over done....they can get a little bitter. They aren't hard they just need a watchful eye.
Twice Baked sweet potatoes:
Bake like in the top instructions. Remove from oven and split in 1/2 lengthwise. Scoop out potatoes leaving some in the shell so that the shell has some form and shape to it. Mix/mash the potatoes with milk or cream, butter, brown sugar, cinnamon, and salt. Fill the shells with the mashed up mix, there will be enough filling for the potatoes to be mounded. You can sprinkle with a little more brown sugar if you want, then bake about 20 more minutes, so that they are nice and hot.
Saw this on Paula Dean, and then tried it....yummy.
I would bake the potatoes first or you can peel them and then boil them. Sweet potatoes are harder to peel raw but it's up to you. When the potatoes are tender drain or peel (depending on method used) Mash up with some browm sugar, salt, white pepper, milk-cream- or even canned milk, butter, cinnamon. Use the milk and butter sparingly. You want the mix to be fairly stiff. Then place a large marshmellow in the middle of a lump of the sweet potato mash. Roll the ball into toasted coconut. Bake for about 7 1/2-10 min at 350. Be careful not to overbake or else the marshmellow will ooze out.
you can make yams. Cook the sweet potatoes for about 30 mins or something. Peel them and just mash them. You can add other things you like to make it sweeter or just leave it as is.
Mashed Sweet Potatoes
2 pounds, 2 to3 large, sweet potatoes, peeled and sliced or cubed
Salt
1/2 cup chicken stock
2 tablespoons butter
1/4 cup orange marmalade
Black pepper
A couple dashes hot sauce
Cover potatoes with water and bring to a boil. Salt water and cook potatoes 12-15 minutes until tender. Drain the potatoes. Return pot to the stove and warm broth over medium heat. Whisk in butter and marmalade. Add potatoes and mash the sweet potatoes. Season with salt and pepper and a few dashes hot sauce. Serve immediately.
Roasted Sweet Potatoes
Cut sweet potatoes into about 1'; - 1 1/2'; pieces. Cut Large 1 large Onion and one large bell pepper. Add a few country style ribs (seasoned as if were going to be bbqed--with RUB not BBQ Sauce!) 1 stick of butter, half a can of beer, salt and pepper. Wrap all up in tinfoil and place in oven or on the grill.. cook until meat is done and potatoes are tender......
My two favorite ways for sweet potatoes:
1) BBQ
Wash and slice sweet potatoes. Mix with olive oil and spices. Try either italian seasoning if you like sweet or red pepper and garlic if you like savory.
Grill on the BBQ in a single layer until browned and soft.
2) Mashed
Peel and cube sweet potatoes. Boil approximately 10-15 minutes until soft. Drain and mash. For sweet add a tbs of maple syrup, for savory and a tbs of butter and some parmesan cheese.
Both are easy and delicious.
