Does anyone have an easy recipes for sweet potatoes?

I started liking them for the first time this Thanksgiving and I want to make them for my roommates!Does anyone have an easy recipes for sweet potatoes?

Cook and mash 5 or 6 yams


Mix and then blend together with yams:


1 cup sugar


1/2 cup margarine


2 eggs


1 tsp vanilla


1/3 cup evaporated mix


Put in 9X13 baking dish





Topping:


1 cup brown sugar


1/2 cup flour


1/3 cup margarine


1 cup chopped pecans


1/2 cup chopped dried cranberries


1/4 cup shredded coconut


Mix together and sprinkle over yams


Bake at 350 degrees for 25-30 minutes .
You can make biscuits with it.
Boil them for a little bit until their soft. Mash them and whip them up with a little bit of butter, brown sugar, Cinnamon and nutmeg. Its the best.

I prepare them the same way as I do regular potatoes. I never add sugar of any kind to them, though, just butter.
Sweet Potatoes With Pecan Crumb Topping


POTATOES


2 1/4 lbs sweet potatoes, peeled and chopped


1 cup half-and-half


3/4 cup packed brown sugar


1 teaspoon salt


2 teaspoons vanilla


2 eggs


TOPPING


1 1/2 cups miniature marshmallows


1/4 teaspoon salt


1/2 cup flour


1/4 cup packed brown sugar


2 tablespoons chilled butter, cut into small pieces


1/2 cup pecans, chopped





Place potatoes in boiling water and simmer for 20 min, or until tender; drain and cool slightly.


Place potatoes in a large bowl; add half and half, 3/4 cup brown sugar, 1 tsp salt and vanilla and beat at medium speed until smooth (or mash with potato masher to desired consistancy).


Add eggs and mix well; scrape into a 13 x 9 dish coated with cooking spray.


For topping: sprinkle marshmallows over top.


Combine flour, 1/4 cup brown sugar, and 1/4 tsp salt in medium bowl.


Cut in butter until mixture resembles coarse meal; stir in pecans and sprinkle over potatoes.


Bake for 30-40 min, or until golden brown.
Sweet Potato Oven Fries





2 medium sweet potatoes, scrubbed


non-stick vegetable oil spray


salt to taste


1 tsp. ground nutmeg %26amp; 1 tsp. cinnamon, mixed





1. Preheat oven to 400 degrees F.





2. Cut the potatoes crosswise, 1/4-inch thick. Spray a baking sheet with the nonstick vegetable oil spray and arrange the potatoes in one layer. Bake them in the preheated oven for 15 mins., turn them over, and bake them for an additional 10 minutes or until just golden.





3. Sprinkle them with salt and the nutmeg/cinnamon mix.
