My Grandmother used to make sweet potato pies without milk or cream. She was an old Southern woman that never measured or wrote down anything she knew by heart. I never got the chance to write the recipe down before she past away. I want to bake one for the upcoming holiday. Please help!Are there any sweet potato pie recipes that dont call for milk or cream?
Though I don't have an exact recipe for you, I would suggest baking the sweet potatoes, rather than boiling them. Their flavor is much more rich when baked.
Or, you could do as I have done before, and it tastes dynamite!! Make candied sweet potatoes, and once they are fully cooked, mash them (or use the blender/mixer) and pour into pie crusts and bake.
Here's a recipe for those, adjust it as you may need for a smaller batch.
3 pounds sweet potatoes or yams--peeled and cubed
1 cup sugar
1 cup brown sugar
2 sticks sweet butter, cubed

2 medium sweet potatoes
2 Tbsp undiluted cherry juice concentrate
1 Tbsp brown sugar
1 Tbsp butter or buttery spread, melted
1/8 tsp ground ginger
1 green onion, sliced
Directions:
Preheat oven to 400潞F.
Scrub potatoes and cut in half lengthwise; do not peel. Spray a baking pan with nonstick cooking spray. Place potatoes in pan, cut-side down. Bake in preheated oven 30 to 40 minutes or until almost tender.
Stir together undiluted cherry juice concentrate, brown sugar, butter, and ginger. Turn potatoes cut-side up and brush with cherry mixture. Bake 5 to 10 minutes or until tender. Sprinkle with green onion. Serve immediately.

I dont use milk or cream
I boil 2 sweet potatoes until fork tender. Cool peel and mash them with 3 eggs, 1-2 cups of sugar (taste), 1 stick of butter, 1 tsp vanilla extract. Pinch of cinnamon and nutmeg and beat it with a hand mixer. Its usually enough for 2 9-inch pie shells
Bake at 350 degrees for 1 hour
