It had raw grated sweet potatoes with eggs, milk, allspice, cloves, brown sugar, nutmeg, cinnamon and butter. My mom used to make this when I was young. I never knew the recipe. Please help.Does anyone know of a sweet potato pudding recipe where the pudding is molded like a meat loaf?
Any spice may be added to enhance flavor of a recipe...use a loaf pan for meatloaf shape...
Sweet Potato Pudding
3 lbs. sweet potatoes, grated
1/2 tsp. fresh grated nutmeg
1 inch piece fresh ginger, grated
1 1/2 cups packed brown sugar
1 tsp. salt
1 (14-ounce) can sweetened condensed milk
1 tsp. vanilla extract
1 1/2 cups water
1 cup butter softened
Preheat oven to 375 degrees. Butter a 9-inch square pan. In a large bowl, mix the grated sweet potatoes, nutmeg, ginger, brown sugar and salt. In a medium bowl, combine the milk, vanilla, water and butter. Mix with the sweet potato mixture and pour into the buttered pan. Bake until center is set, about 1 1/2 hours. Makes about 20 servings.

Here's your recipe, use a bread loaf pan to get the shape you want, grease it up good so it'll flip out, okidoki?
You're going to have to soften up those grated taters so you could do that in the Micro or blanch them in so water for about 5min.
Sweet Potato Pudding
INGREDIENTS:
2 eggs, separated, room temperature
1/4 cup butter or margarine
1/2 cup firmly packed light brown sugar
1/4 cup milk
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
dash ground ginger
1 cup mashed cooked sweet potatoes
PREPARATION:
In a medium mixing bowl, beat egg whites until stiff peaks form. Beat yolks in a separate bowl. In a mixing bowl, cream together butter and sugar; add well-beaten egg yolks, milk, salt, nutmeg, cinnamon, ginger, and sweet potatoes.
Fold in beaten egg whites. Turn mixture into a buttered 1 1/2-quart casserole. Bake at 350掳 for 40 minutes. Serve with cream or a caramel sauce. Serves 4.
