I have been told to eat either brown rice, brown pasta or sweet potatoes in the evenings because it will help my bike riding early am the next day. I went out today and bought all these and cooked some of the rice....AAAHHHRRRR!!!!!!!! YUK. Is there any quick and easy recipe I can use for any of these 3 things without swamping them in fat and still giving me the full carbs without it tasting like poison? How do you eat yours? We usually cook Sweet Potatoes inthe same way as regular Jacket potatoes - just scrub and bake.

Scoop out the soft potato into a bowl, stir in 1 ounce (25gr) cream cheese. half an egg yolk (I usually do two at once!) 1/2 tspchilli powder, 1 large chopped spring onion, add sea salt %26amp; black pepper to taste. Mix the lot together, pile back into the skin. Dot a little butter or extra grated cheese on top. Sprinkle with a little extra chilli powder and grill.
To make rice more acceptable, have you come across the Thai style sweet chilli dip? That stirred into it gives a whole new flavour.

I really like whole wheat spaghetti with tomato sauce with green, red, and yellow peppers, mushrooms, and onions. I make a lot of baked potatoes and grilled chicken breasts when the weather permits. I wrap the potatoes in foil with just a spay of cooking oil like pam. I don't put anything on them, they taste great by them self. You can bake a sweet potato the same way. I always use the huge potato's like you find in restaurants. Carrots baked in foil taste very much like a sweat potato and are great as a side dish as well as green beans.
