SCALLOPED SWEET POTATO CASSEROLE
6 medium sweet potatoes
2 medium onions
2 tablespoons vegetable oil
salt
2 tablespoons butter
2 tablespoons all-purpose flour
3/4 teaspoon ground ginger
1/4 teaspoon pepper
2 cups milk
2 tablespoons chopped parsley
In 5-quart saucepot over high heat, heat unpeeled sweet potatoes and enough water to over to boiling. Reduce heat to low; cover and simmer until sweet potatoes are just fork-tender but not soft, about 20 minutes; drain. Cool sweet potatoes until easy to handle.
Meanwhile, slice onions 1/4 inch thick. In 12-inch skillet over medium-high heat, in hot vegetable oil, cook onions and 1/4 teaspoon salt until tender, stirring occasionally.
Preheat oven to 375掳F. Grease 13'; by 9'; baking dish. Peel sweet potatoes and cut into 1/4-inch thick slices. In bottom of baking dish, arrange one-third of sweet potatoes; sprinkle with half of onions. Place half of remaining sweet potatoes over onion layer, then top with remaining onions.
Arrange remaining sweet potatoes over onions.
In 1-quart saucepan over medium heat, melt butter; stir in flour, ginger, pepper, and 1 teaspoon salt until blended; cook 1 minute.
Gradually stir in milk; cook, stirring constantly, until sauce boils and thickens slightly.
Pour sauce over potatoes in baking dish; sprinkle with parsley. Bake 30 minutes or until sauce is bubbly and mixture is heated through. If you like, broil 1 minute to brown top of potatoes slightly.What's your favorite sweet potato recipe?

4 cups sweet potatoes (can or fresh- cooked, drained, and mashed).
1/2 cup white sugar
1 stick melted butter
1/2 cup milk
1 Tbs vanilla
3 1/2 oz. coconut
2 eggs
Mix together and put in 13X9 oven dish and bake for 25 minutes at 350 degrees. Do not cover.
make topping:
1 stick melted butter
1 cup brown sugar
1/2 cup flour
1 cup chop nuts (pecan or walnuts)
Melt butter with brown sugar and mix all ingredients together. put on top of casserole and bake another 20 minutes, uncovered at 350 degrees.

half can mashed sweet potatos
1/4 cup sugar
2 1/2 cup bisquick mix
chunk of butter
1/2 skim milk
you just combine all the dry ingredients and then add the sweet potatos. then you drop the onto the baking pan thing and bake at 350 for about 30 minutes.
Sweet potato is best eaten/ enjoyed at its original taste... It's either you boil it, steam it or bake it... Sweet small purple japanese potatoes are the best.

bake the sweet potatoes until they are soft.let them cool then take the skin off.mash them, then put small pieces of pineapple %26amp; cinomon.put in a baking dish then put mini marshmellows on top to cover.put under a low brolier and heat untill marsgmellows are light brown.
like a lot of my recipes i go the easiest way because i cook for a lot of people! blend canned sweet potatoes with, pineapple manderin oranges, soft butter, (use amounts to your own taste)dark brown sugar,pumkin pie spice (i use that because then i don't have to buy cinnamon nutmeg, all in there) then i actually gut out large oranges ,fill them up with the mixture, heated up %26amp;blended well ,should be thick,top with marshmallo creme , bake till golden......
Very simple: slice with apples, sprinkle with cinnamon and bake until they are fork tender - YUM!
Cubed and satueed in olive oil with onions, salt and pepper until soft. I'm generous with the olive oil. Then top with sour cream or plain yogurt. YUM!
