OK, who has good sweet potato recipes? I'm about to have a bumper crop!?

All variety please, I want to take advantage of the amount and try a lot of different things...OK, who has good sweet potato recipes? I'm about to have a bumper crop!?

Sweet Potato Pie. 1-1/2 cups of cooked sweet potatoes peeled 2eggs 1-2/3 cup sugar 3/4 cup evaporated milk 1/2 cupbutter melted 1/4 cup light corn syrup 3 Tablespoon flour 1/2 teaspoon cinnamon pinch of salt 1-9inch unbaked pie shell. Mix sweet potato and eggs in blender , blend until smooth , put in bowl add the rest of the ingredients mix wel pour into unbaked pie shell. Bake at 350 degrees for 55-60 minutes or until toothpick when inserted into middle of pie is clean. Tastes like a Butterscotch Pie. Yummy!!!!!
SWEET ;POTATO SQUFFLE


3 cup mashed sweet potatoes


1 cup sugar


1/4 salt


2 egtgs


1/2 stick margine


1/2 cup sweet milk


1 tsp. vanilla





Topping


1 cup brown sugar


1/2 cup flur


1/2 stick butter melted





Direction


Mix all ingredients with an electric mixer to get the strings. Pour into greased baking dish. Topping. Mix thourghly and sprinkle on squffle. Bake at 350 degrees for 35 minutes.

SWEET POTATO CASSOROLE


3 cup sweet cook sweet potatoes


1 cup sugar


1/4 stick butter


2 eggs beaten


1/2 teaspoons vanilla


1/2 cup raisins


1/2 cup milk


1 cup brown sugar


1 cup coconut


1/2 cup of melted butter


1/2 cup flour


Dir. Mix sweet potatoes and sugar, eggs, buitter and mix and vanilla Pour in to dish and then mix flour and sugar and coconut and melt butter. Pour over potatoes in casserole dish. Bake at 350 degreee for 40 minutes.
you can also make mashed sweet potatoes, like regular or french fries with them. It's just a different twist on them. Or you can make sweet potato bread or pie. Anything you make from potatoes or pumpkin.
Baked Sweet Potatoes:





Notes: Roast with the turkey; serve with gravy.





10 to 12 sweet potatoes or yams (1 1/2 to 2 in. thick and about 6 in. long)


Turkey gravy


Butter or margarine


Salt and pepper





Scrub sweet potatoes and pierce in several places with a fork. Place potatoes on oven rack or in a single layer on a baking sheet. Bake in a 325掳 to 350掳 oven until potatoes give readily when gently squeezed, about 1 1/2 hours. Slit open; season to taste with gravy, butter, and salt and pepper.





Yield: Makes 10 to 12 servings
Sweet Potato Buscuits





1 1/4 cups all-purpose flour


2 heaping tablespoons sugar


1/2 teaspoon salt


3/4 cup cooked, mashed sweet potatoes


1/4 cup softened butter


2-4 tablespoons milk





Preheat the oven to 450 degrees F.


Sift together flour, sugar, baking powder and salt. In a separate, large bowl, mix the sweet potatoes and butter. Add the flour mixture to the potato mixture and mix to make a soft dough. Then add milk a tablespoon at a time to mixture and continue to cut in. Turn the dough out onto a floured board and toss lightly until the outside of the dough looks smooth. Roll the dough out to 1/2-inch thick and cut with a biscuit cutter. Place the biscuits on a greased pan and coat tops with melted butter. Bake for about 15 minutes

Scalloped Sweet Potatoes





6 medium-large (2.5-3 pounds total) sweet potatoes


4 T cold unsalted butter, cut into bits


1.5 cups grated sharp cheddar cheese


salt to taste


freshly grated ground black pepper to taste


1.25 cups low fat milk





Preheat the oven to 425F. Lightly butter a 10x10x2 inch or other large shallow baking dish. Peel the sweet potatoes and cut them in half lengthwise. Then slice them into paper thin half-moons.





Spread half the slice dpotatoes in the bottom of the baking dish. Sprinkle with half the butter bits and grated cheese, and season with salt and pepper. Spread the remaining sweet potato slices on top, then the remaining butter and grated cheese.





Slowly pour the milk into the corner of the dish, then gently shake the dish to distribute the milk. Cook, uncovered, 45 minutes, or until the potatoes are tender when pierced with a knife. Let sit 10 minutes before serving.

sweet potatoe fries, cut them like fries, drop them in oil like fries, salt them like fries...sweet potatoe fries :)
The one that is still my favorite, is to bake then add butter and sour cream, or butter and Cinnamon and sugar.
I really love them baked and topped with real butter. Some folks add brown sugar which is good too.





Sweet Potato Casserole





Ingredients


6 lrg Sweet potatoes


1 stk butter


6 x Ripe bananas, firm, sliced


3/4 cup Light brown sugar, mixed with


1 tsp Cinnamon


16 oz Crushed pineapple, drain, reserv. liq.


1 cup Pineapple juice, mixed with


1/2 x Lime, juice of


1 tbl Honey


Chopped walnuts (optional)





Clean sweet potatoes and place in a large pot. Cover with water. Bring to a boil. Cook only until they're partially done and still firm. Drain and peel. Slice potatoes. and arrange a layer in a greased casserole dish. Dot the potatoes with butter and salt. Add a layer of bananas. Sprinkle the brown sugar and cinnamon mixture over bananas. Add one third of the drained pineapple. Repeat each layer. Add one final layer of sweet potato and top with the remaining 1/3 pineapple. Combine the pineapple and lime juices with the honey and pour over the sweet potato casserole. Bake in a preheated oven 350 oven for 40 minutes, or until browned on top.





My kids love it when I top this casserole with mini marshmallows.
