I'm sick of mashed sweet potato and would like some new ideas... :DWhat are some good recipes for SWEET POTATO???
I make cut mine in half lengthwise and roast them with a marinade brushed on them made with :
1 teaspoon of English mustard powder
2 tablespoons of honey
1 tablespoon of worcestershire sauce
2 tablespoons of ketchup
Salt and Pepper.
Mix them together and brush onto the cut sides and roast them in a medium oven until done.

1. Santa Fe Sweet Potato Corn Salad
/4 cup olive oil
2 teaspoons red wine vinegar
2 teaspoons balsamic vinegar
2 teaspoons Dijon mustard
2 teaspoons lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon ground cumin
1 1/2 cups peeled, diced sweet potatoes (one 8-10 ounce sweet potato)
1 cup frozen corn
1 can (15 ounce) black beans, rinsed and drained
1/4 cup finely chopped red onion
1/4 cup crumbled feta cheese
1/4 cup chopped fresh parsley (or cilantro)
1 fresh jalapeno pepper, seeded and finely chopped (optional)
To prepare dressing, whisk oil, vinegars, mustard, lemon juice and seasonings in a small bowl until well blended. Set aside.
Bring a large pot of water to a boil. Add sweet potatoes and corn and cook for 3 minutes until tender. Drain and cool. In a medium glass bowl mix sweet potatoes and corn with black beans, onion, cheese and parsley. Toss with dressing. Refrigerate at least 1 hour to blend flavors.
Makes 8 servings.
2. Sweet Potato Chocolate Chip Mini Muffins
2 sweet potatoes (about 6 ounces each)
1 cup flour
2 cups light brown sugar
2 teaspoons cinnamon
1/2 teaspoon salt
2 teaspoons baking soda
1 cup vegetable oil
4 eggs
1 cup mini chocolate chips
Preheat oven to 350掳F.
Cut sweet potatoes into large pieces. In a medium saucepan, cook in boiling water until tender when pierced with a fork. Drain and cool. Remove skin and puree in food processor or mash thoroughly with a fork. This should yield 1 1/4 cups sweet potato puree.
In a large bowl, combine flour, sugar, cinnamon, salt and baking soda. In another bowl, mix together oil, sweet potato puree and eggs. Make a well in dry ingredients and stir in sweet potato mixture. Fold in chocolate chips. Spoon into mini muffin tins lined with paper cups. Fill to top. Bake 15-20 minutes. Cool on racks.
Makes 4 dozen mini muffins.
3. Sweet Potato Rosemary Soup
1 tablespoon olive oil
1 large onion, chopped
2 sweet potatoes (6-8 ounces each)
2 carrots
2 cloves garlic, minced
5 cups chicken or vegetable stock
1 tablespoon fresh chopped rosemary
1 tablespoon fresh thyme leaves
2 large Granny Smith apples
1/2 cup heavy cream
Salt and white pepper
In a large soup pot heat oil. Sautee onion 5 minutes or until softened. Peel and cut sweet potatoes and carrots into 2-inch pieces and add to pot with garlic. Cook 2 minutes more. Stir in stock and fresh herbs. Peel, core and cut apples into 2-inch pieces; add to soup and bring to a boil. Lower heat and simmer 15-20 minutes until vegetables are tender when pierced with a fork. Using a food processor or blender, puree mixture in batches. Stir in cream. Season to taste with salt and white pepper.
Makes 6 to 8 servings.

Sweet potato gratin
Serves 6
Preparation time less than 30 mins
Cooking time 30 mins to 1 hour
Ingredients
1kg/1lb 2oz sweet potatoes, peeled and sliced thinly - about the thickness of a 10p piece is ideal
2 tbsp olive oil
3 garlic cloves, finely chopped
陆-1 red chilli (depending on variety and heat strength), chopped
finely (or 1 tsp dried chilli flakes - not powder)
250ml/8fl oz single cream
salt and black pepper
Method
1. In a large mixing bowl toss the sweet potato slices with the oil and all the other ingredients until the slices are well coated and the garlic and chilli well-distributed.
2. Transfer to a lightly oiled gratin dish, spreading out the slices with your fingertips, you do not have to layer the gratin piece by piece, but try to ensure that the slices are mostly lying flat.
3. Pour over any cream remaining in the bowl and trickle the remaining oil over the gratin.
4. Bake in a preheated, fairly hot oven (180C/350F/Gas 5) for 40-50 minutes until the sweet potato is completely tender and the top is browned and crispy.
5. For extra crispness you can finish under the grill for 1-2 minutes.

Chicken and sweet potato recipe -
ingredients
* 900 g (2 lb) sweet potatoes, scrubbed and cut into 1 cm (陆 in) slices
* 4 skinless boneless chicken breasts (fillets), about 140 g (5 oz) each
* pinch each of ground cinnamon and cumin
* 200 g (7 oz) mixed salad leaves
* 录 cucumber, thinly sliced
* 4 tomatoes, cut into thin wedges
* 2 tbsp chopped fresh coriander
* 2 tbsp toasted sunflower seeds
* 2 spring onions, finely shredded
* Pineapple salsa
* 陆 ripe pineapple, about 340 g (12 oz), peeled and chopped
* 陆 small red onion, chopped
* 陆 red pepper, seeded and finely diced
* 2 tbsp chopped fresh mint
* 录 tsp mild chilli powder, or to taste
* pinch each of ground cinnamon and cumin
* juice of 陆 lime
* Lime and soy dressing
* 1 tsp caster sugar
* juice of 陆 lime

1. Cook the sweet potato slices in boiling water for 6鈥? minutes or until tender. Drain and leave to cool.
2. Poach the chicken breasts in simmering water (use the water from the sweet potatoes, if liked) for 4鈥? minutes or until cooked through. Drain and leave to cool, then cut into 1 cm (陆 in) slices.
3. Put the chicken and sweet potato slices in a bowl and sprinkle with the cinnamon and cumin.
4. To make the salsa, combine the pineapple, red onion, red pepper, mint, chilli powder, cinnamon, cumin and lime juice in a mixing bowl.
5. Mix the dressing ingredients in a large shallow salad bowl. Add the salad leaves and toss to coat with the dressing. Arrange the chicken and sweet potato slices, the cucumber slices and tomato wedges on top of the leaves, and scatter over the chopped coriander, sunflower seeds and spring onions. Serve with the pineapple salsa, to be added to taste.

Lay out the washed chicken on some lightly oiled baking foil in a medium baking tin. thinly slice sweet potatoes on top put herbs as your taste cover with single cream then fold over the baling foil to make seal cook in a pre warmed oven at 180C for 40 minutes

Do not peel, only wash.
Prick some hole in them with a fork and put them in the microwave until they are soft.
Slice a cross cut in each and push with fingers on the four sides of the cross cut so that the inner pops out partially from the cut.
Add some butter, salt to taste and a bit of sugar and serve as a side item with a meaty stew or steak or sausage.
Maybe slice them (like cucumber slices - round) and coat them with something (look for info from the pros - maybe just olive oil or something) and grill them.
Sweet potato biscuits, recipe as follows.
Wash, prick, bake 1 pound of sweet potato at 350 degrees F until soft and juices run out, about 1 hour. Cool, peel, and discard skins. Place puree into a food processor or blender and add 1/2 c. buttermilk or milk. Set aside.
Sift 2 1/2 c. all purpose flour, 4 tsp. baking powder, 1 tsp. salt, 1/4 c. brown sugar, 1/4 tsp cayenne red pepper together, set aside.
Cut 8 TBL. cold butter into small pieces. Add butter to dry ingredients, cutting in until mixture resembles coarse sand.
Preheat oven to 400 degrees F.
Now add puree to flour/butter mix, stir until well combined. Turn dough out onto floured surface and gently knead 2 or 3 times until a fairly smooth dough is formed. Roll dough out to 1/2 inch thickness, cut with a biscuit or cookie cutter, Place discs onto an ungreased cookie sheet with each biscuit barely touching the one next to it. Beat one egg with a few drops water. Brush mixture over tops of biscuits, sprinkle with sugar if you wish a slightly sweeter biscuit.
Bake at 400 degrees F about 10 -12 minutes until golden brown. Serve warm with cranberry relish or butter and honey. Yummy!

Follow any root vegetable recipe and just substitute sweet potato.
