cut them in thin discs and soak them in icy water before dredging them in seasoned flour/cornstarch or get a tempura batter in ice bath, cut the sweet potatoes in thicker discs. deep fry them.

cold temp bfore deep frying will produce crisper chips.. if u want to cut them in fries, go ahead..but that's how i do it.

goes well with nice cottage cheese/sour cream/ mayo dips with fresh herbs or spices.. or make up a salsa with mango.
FRENCH FRIED SWEET POTATOES

brush them clean and stripe them when you peel to leave strips of skin on. Slice them the way you want and then fry at 350 for around four to six minutes. Let them drain and then depending on your taste buds either coat and shake them in Zatarains for something spicy or a mixture of cinnamon and sugar for something sweet.
this is quick and easy, wash and peel the potatoe into wedges, pour olive oil at the bottom of a baking dish or a pizza pan, bake at 350 for about 20-25 minutes or until crispy, sprinkle with salt and voila!

Wash, peel, and slice potatoes lengthwise. Slice should not be over 1/4 inch thick. Place in dish of cold water to retain color. Mix all dry ingredients well, and place in shaker. Pat potatoes dry and place in deep fryer or frying pan with enough oil to float. Fry until edges turn slightly brown and curl. Drain on paper towels. While still hot, sprinkle with the dry mixture on both sides. May be served hot or cold. Yields 6 servings.

1/2 c. sugar

1/4 tsp. ginger

1/4 tsp. nutmeg

1/4 tsp. cinnamon
I don't know, but Q Shack in Durham, NC, makes some very tasty ones. They're not on the menu all the time (though they should be!!).
