Mashed Sweet Potato/Yam Recipes?

With all the trimmings, example: marshmallows!Mashed Sweet Potato/Yam Recipes?
I'm trying this one for Thanksgiving. Looked good to me, and a bit different: (just got it from Yahoo Answers!!)





Sweet potatoes, casserole: Drain a large can of sweet potatoes - put in baking dish. Add a small can of (drained) pineapple either crushed or pieces and a small can (drained) of mandarin oranges. Sprinkle with a thin layer of brown sugar, dot with butter. Arrange a layer of marshmallows on top. Bake (uncovered) until heated through and marshmallows are brownedMashed Sweet Potato/Yam Recipes?

MICHIE's SWEET POTATO SOUFFLE:


3 lbs. sweet potatoes, peeled %26amp; cut into cubes


2 eggs


1/2 cup brown sugar - divided


1/2 cup butter - melted - divided


1 teaspoon salt


1 teaspoon ground cinnamon


up to 1/2 cup orange juice


1 cup chopped walnuts


large marshmallows


In a large saucepan over high heat, bring potatoes to boil, reduce heat; cover and simmer 15-20 minutes and drain.


Beat potatoes until slightly smooth, beat in eggs, 1/4 cup brown sugar, 1/4 cup melted butter, salt and cinnamon.


Starting with 1/4 cup orange juice, make mixture moist and fluffy.


Spread in a 2-3 quart pan. Top with nuts. Sprinkle 1/4 cup brown sugar, then 1/4 cup melted butter. Place Marshmallows on top.


Bake at 350 degrees for 25-30 minutes. Don't let marshmallows over cook.
Boil the sweet potatoes in one pot until done. In another pot boil two medium sized beets (peeled). Drain the water. Start to mash the sweet potatoes, adding cottage cheese and sour cream instead of milk %26amp; butter. Add red pepper. When mashed to completion slice the beets in even slices. (Two for each person eating) Place slice of beet on each plate and a scoop of potatoes on top.





Or chop the beets and mash it in with the potatoes. Use sour cream %26amp; cream cheese and ginger.

This is my best mashed yam recipe, which I just invented five seconds ago. First, get some yams, peel them, boil them in a pot. While the yams are boiling, order pizza. When the yams are done, strain off the water and throw them in the garbage. By this time the pizza should have arrived. Enjoy !
