Need recipes for Sweet Potato Casserole?

Take 2 lbs sweet potatoes, peel, dice %26amp; boil til fork tender. In mixing bowl, add cooked potatoes, 1 tsp cinnamon, 1 tsp nutmeg, 1 egg, 1/2 cup brown sugar, 1/2 cup regular sugar. Mix all together with mixer, then pour into casserole dish. In saucepan over medium heat, melt together 1stick butter, 1 cup frosted flakes, 1/2 cup crushed pecans. Spoon over top of casserole, then bake @ 350 for about 45 - 55 minutes........Wonderful with ham!!Need recipes for Sweet Potato Casserole?
2 1/2 pounds sweet potatoes (about 3 large), scrubbed


2 large eggs, lightly beaten with a fork


3 tablespoons unsalted butter, melted plus more for the preparing the pan


2 tablespoons packed dark brown sugar


1 teaspoon kosher salt


1/2 teaspoon ground cinnamon


1/2 teaspoon ground ginger


Pinch of freshly grated nutmeg


Freshly ground black pepper


1/4 cup coarsely chopped pecans





Preheat the oven to 400 degrees F. Put the sweet potatoes on a baking sheet and pierce each one 2 or 3 times with a fork. Bake for 45 to 60 minutes or until tender. Set aside to cool.


Turn the oven down to 350 degrees F. Scoop the sweet potato out of their skins and into a medium bowl. Discard the skins. Mash the potatoes until smooth. Add the eggs, butter, brown sugar, salt, cinnamon, ginger, nutmeg, and pepper to taste. Whisk the mixture until smooth.





Butter an 8 by 8-inch casserole. Pour the sweet potato mixture into the pan and sprinkle the top with the pecans. Bake for 30 to 40 minutes until a bit puffy. Serve immediately.Need recipes for Sweet Potato Casserole?

';Candied Yams'; - 6 servings





4 yams or sweet potatoes; unpeeled


1 tsp. salt


1/2 cup butter or margarine


1/2 cup packed brown sugar


1 tbsp. grated orange peel


1/4 cup orange juice or water


1/8 tsp. cinnamon


Generous dash pepper


1/2 cup coarsely chopped walnuts (optional)





1) In 4-quart saucepan, place yams and salt; add water to cover. Over high heat, heat to boiling. Reduce heat to low; cover and simmer 30-40 minutes until yams are fork-tender. Drain; cool slightly. Peel and quarter yams


2) In same saucepan, combine butter, brown sugar, orange peel, orange juice, cinnamon and pepper; heat to boiling. Add yams and nuts; heat until yams are glazed, spooning sauce over to coat.


SWEET POTATO CASSEROLE: Use ingredients as above, but omit walnuts. Prepare as above in step 1. Butter 2-quart casserole. In large bowl with mixer at low speed, beat potatoes and remaining ingredients until light and fluffy. Spread potato mixture into prepared casserole; top with 2 cups miniature marshmallows. Bake at 375* - 15 minutes or until topping is golden.
A quick and easy recipe is take 2 large cans of sweet potatoes packed in syrup. Drain and place in a large mixing bowl. Add 2 eggs, 1 can of sweetened condensed milk, 1 1/2 tsp. vanilla, 2 Tablespoons of melted butter, 1/4 c. molasses, 1 tsp. lemon zest, and 1 and 1/2 tsp. of pumpkin pie spice. Mix together with a hand held mixer. Pace in an 9 1/2 x 11 oblong


pan. Top with pecans and edge with marshmallows. Heat in a 350 degree oven 25-30 minutes until bubbly. Enjoy!
