In the American South, how are sweet potatoes prepared besides in pies an candied? All the recipe searches I do pull up one or the other.

Sweet Potato Pie

1 pound 3 ounces sweet potatoes, peeled and cubed
1 1/4 cups plain yogurt
3/4 cup packed, dark brown sugar
1/2 teaspoon of cinnamon
1/4 teaspoon of nutmeg
5 egg yolks
Salt
1 (9-inch) deep dish, frozen pie shell
1 cup chopped pecans, toasted
1 tablespoon maple syrup
Special equipment: steamer basket
Put cubed potatoes into steamer basket and place steamer basket into a large pot of simmering water that is no closer than 2 inches from the bottom of basket. Allow to steam for 20 minutes or until the potatoes are fork tender. Mash with potato masher and set aside.
Preheat the oven to 350 degrees F.
Place sweet potatoes in the bowl of a stand mixer and beat with the paddle attachment. Add yogurt, brown sugar, cinnamon, nutmeg, yolks, and salt, to taste, and beat until well combined. Pour this batter into the pie shell and place onto a sheet pan. Sprinkle pecans on top and drizzle with maple syrup.
Bake for 50 to 55 minutes or until the custard reaches 165 to 180 degrees. Remove from oven and cool. Keep refrigerated after cooling.

They can be baked like a white potato and then topped with brown sugar and butter; sliced into rounds or wedges and then either baked or fried like French Fries; make mashed sweet potatoes with butter and milk, whip in a taste of cinnamon and nutmeg and dot with butter before serving...
Kings Arms Tavern Sweet Potatoes
3-pounds sweet potatoes
戮-cup light brown sugar, packed divided
3-tablespoons butter
5 teaspoons cinnamon
陆-teaspoon nutmeg
录-teaspoon salt
1-cup milk
Preheat oven to 400潞
Grease 1陆 quart casserole
Cook sweet potatoes in boiling salted water until done; drain peel and mash them.
Stir in all the remaining ingredients except 2 tablespoons of sugar.
Turn the mixture in to prepared casserole and sprinkle with remaining sugar and dot with some butter.
Bake at 400潞 for 30 minutes.

Sweet Potato-Bourbon Dressing:
1 large sweet potato, about 3/4 pound, rinsed and patted dry
1/2 cup orange juice
2 tablespoons cane syrup
1/4 to 1/2 cup apple cider vinegar
1/4 cup Kentucky bourbon
1 tablespoons chopped shallots
1/2 teaspoon fresh cracked black pepper
1/8 teaspoon allspice
1 teaspoon salt
1/2 cup soybean oil
4 (6-ounce) catfish
1 cup rice flour
Essence, recipe follows
1 large Vidalia onion, sliced thinly into half moons
1 1/2 cups thinly sliced Smithfied ham, Sauteed
2 peaches, pitted and diced
6 cups mixed greens

To make the dressing: Preheat the oven to 400 degrees F.
Place the sweet potato on a baking sheet and bake for 30 minutes. Reduce the heat to 375 degrees F and bake until tender and the syrupy sugars start to break through the skin, about 45 minutes. Remove from the oven and let sit until cool enough to handle. Cut a slit down the potato and remove the peel.
In a blender, combine the sweet potato, orange juice, cane syrup, vinegar, bourbon, shallots, pepper, allspice and salt. Puree for 30 seconds. Pulsing, gradually add the oil through the feeder tube.
Preheat the fryer to 360 degrees F.
Season the catfish fillets with Essence. Dredge the catfish in rice flour, shaking off any excess. Add to the oil and fry for about 1 to 2 minutes per side. Remove to paper towels. In a large bowl combine, onions, ham, peaches, and mixed greens. Add some of the dressing and toss well. Place a mound of the greens on a plate. Top with the catfish fillets and sprinkle with sugared nuts.
Essence (Emeril's Creole Seasoning):
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme
Many people bake sweet potatoes in the oven just like white potatoes and have their baked sweet potatoes with butter and cinnamon and sugar on top. My Mother makes sweet potato souffle each year at Thanksgiving and Christmas. It is baked sweet potatoes whipped up with butter, sugar, cinnamon, nutmeg, and ginger and then topped with a pecan-streusel topping.
Spray a 9X13 pan with Pam and pour in a small can of crushed pineapple with juice.
Top with slightly over-lapping sweet potato medallions (peeled, sliced potatoes). Sprinkle with salt and cinnamon. Sprinkle on a layer of brown sugar (amount is not critical). Dot with a few pats of butter (about 2 tbsp.) Bake at 375 degrees for 45 minutes (check potatoes for softness). Chopped nuts and or grated coconut can be added as a garnish to each serving.

Any thing that you can do with a white potato you can do with a sweet potato. I know people who like sweet potato french fries.
