I'd be interested in any kind of recipes with sweet potatoes in them. biscuits, jelly, pie, muffins, cookies, etc. anything.I need some good sweet potato recipies for the fair, I'd like to win a blue ribbon, know any great recipes
If you use the orange kumara for this, you will have a beautiful golden pudding. You'll need about 1 lb unpeeled potatoes.
SWEET POTATO PUDDING
13 1/2 oz sweet potatoes, peeled, cooked and mashed
1 cup orange juice
3/4 cup sugar
1/2 cup butter, melted
6 egg yolks, beaten
2 teaspoons preserved ginger in syrup, finely chopped
1-2 teaspoons lemon zest, finely grated
1/4 teaspoon cinnamon or nutmeg
2 egg whites, stiffly beaten
Preheat the oven to 180 degrees celsius.
Combine all the ingredients except fo the egg whites in a bowl and beat together well.
Fold in the egg whites and bake in a greased pudding dish for about 1 hour.

Sweet Potatoes in Orange Cups
6 sweet potatoes, unpeeled
1/2 stick butter, softened
1/4 cup orange juice
1/4 cup chopped pecans
6 large oranges (heavy for their size)
48 mini-marshmallows
Preheat oven to 375 degrees F.
Cover sweet potatoes with cold water in a pot and boil until fork tender. Peel the potatoes, transfer to a bowl, and mash. Stir in butter, orange juice, and pecans and mix until incorporated.
For the orange shells, cut each orange in half and scoop out the pulp using a small knife or grapefruit spoon. Reserve the pulp for another use. Fill each orange shell with the potato mixture and top off with the marshmallows. Bake until hot and the marshmallows are melted.
These all sounds great !!! Here are a couple more.
SWEET POTATO BISCUITS
16 oz.cooked mashed sweet potatoes
1 cup light brown sugar
1/4 cup water or 2% milk
2 1/4 cups southern buttery biscuit mix
1/4 tsp allspice (if desired)
Peel and cook sweet potatoes, set aside to cool. Mix together sweet pototes, Brown Sugar Biscuit mix , and water or milk. Combine ingredients thoroughly. The mixture should be moister than regular Biscuits. Flour table. Roll biscuit mix to 1/2 inch thickness. Cut with 1 1/2 inch cutter or a wine glass. Place on a greased sheet pan.
Bake in a preheated oven @ 350 degrees for 17 min. This mixture does not allow the biscuits to rise much. Its good to have a timer to let you know when they are done, so not to over cook. Serve with Fresh Butter or Land of Lakes sweet Cream. Also very goot with Sauage Patties.
SWEET POTATO COBBLER
2 med. sweet potatoes
3 c. water
2 1/4 c. sugar
2 1/2 sticks butter
1/4 tsp. ground nutmeg
1 recipe biscuit dough
Peel sweet potatoes and slice 1/8 inch thick. Cover potatoes with water and bring to the boil. Cook until potatoes begin to get tender. In a greased 13x9x2 pan layer half the potatoes and 1 cup cooking liquid. Sprinkle with one cup of the sugar, the nutmeg, and chip one stick of the butter over the potatoes. Roll out biscuit dough thin. Cut into strips and criss cross on top. Bake in a 400 degree oven until crust is done and golden brown. Make another layer with remaining potatoes. Again top with one cup sugar, one stick butter, and criss crossed dough strips. Carefully pour enough cooking liquid over the pie until the liquid slightly covers the top crust. Sprinkle the remaining sugar and chip the remaining butter on top of the crust. Bake again in a 400 degree oven until done and golden brown and bubbly.
How about Southern Style Sweet Potato Bread w/ Pecans..
INGREDIENTS
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
1 cup white sugar
2 eggs, beaten
1/2 cup vegetable oil
2 tablespoons milk
1 cup cooked and mashed sweet potatoes
1 cup chopped pecans
1/2 cup golden raisins
DIRECTIONS
Preheat oven to 325 degrees F ( 165 degrees C ). Grease an 8x4 inch loaf pan.
In a medium bowl, stir together the flour, baking powder, salt, nutmeg cinnamon, and sugar. Add the eggs, oil, and milk; mix until well blended. Finally, stir in the mashed sweet potatoes, pecans, and golden raisins. Pour the batter into the prepared pan.
Bake for 70 minutes, or until a toothpick inserted comes out clean. Allow bread to cool in the pan at least 15 minutes before removing. For best flavor, store overnight before serving.
Gourmet Sweet Potato Classic
INGREDIENTS
* 5 sweet potatoes
* 1/4 teaspoon salt
* 1/4 cup butter
* 2 eggs
* 1 teaspoon vanilla extract
* 1/2 teaspoon ground cinnamon
* 1/2 cup white sugar
* 2 tablespoons heavy cream
* 1/4 cup butter, softened
* 3 tablespoons all-purpose flour
* 3/4 cup packed light brown sugar
* 1/2 cup chopped pecans
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
2. Bake sweet potatoes 35 minutes in the preheated oven, or until they begin to soften. Cool slightly, peel, and mash.
3. In a large bowl, mix the mashed sweet potatoes, salt, 1/4 cup butter, eggs, vanilla extract, cinnamon, sugar, and heavy cream. Transfer to the prepared baking dish.
4. In a medium bowl, combine 1/4 cup butter, flour, brown sugar, and chopped pecans. Mix with a pastry blender or your fingers to the consistency of course meal. Sprinkle over the sweet potato mixture.
5. Bake 30 minutes in the preheated oven, until topping is crisp and lightly browned.
These are casseroles/side dishes that are pretty good! The orange cups take a bit of time, though.
PECAN PRALINE SWEET POTATO CASSEROLE
5 large sweet potatoes or yams
1/3 cup milk
1/2 cup softened butter
1/2 cup heavy cream
1/4 cup sugar
1 cup light brown sugar
2 eggs beaten
1/3 cup melted butter
1 teaspoon vanilla
1 cup chopped pecans
Preheat oven to 350 degree F. Scrub the sweet potatoes or yams well and place them in the oven. Bake until tender, about 40 minutes, and remove. When they are cool enough to handle, halve them and scoop out the insides into a large mixing bowl. Mash well. You should have about 3 cups.
Mix the softened butter into the mashed yams or sweet potatoes along with the sugar, eggs, vanilla, and milk. Pour the mixture into a baking pan or casserole dish.
Bring the cream to a simmer in a small saucepan. Add the brown sugar and stir until it dissolves. Cook the mixture over medium heat until it reaches the soft-ball stage on a candy thermometer. Remove from heat and beat in the butter and the chopped pecans. Pour this mixture over the yams. Bake until very hot and beginning to brown.
PRALINE SWEET POTATOES IN ORANGE CUPS
8 medium Louisiana yams
1 stick butter
戮 cups light brown sugar
4 eggs, beaten
1 cup whipping cream
1/8 teaspoon ground allspice
录 teaspoon cinnamon
1 teaspoon salt
1 cup chopped pecans
陆 cup Praline Liqueur
8 orange cups
(4 oranges cut in half,
scoop out all pulp without
damage to rind, flute edges)
Bake yams in preheated 350 degree oven for one hour, or until soft. Peel potatoes and mash until smooth. While hot, add butter, sugar, eggs, cream, allspice, cinnamon and salt. Stir in pecans and Praline Liqueur. Spoon into scooped out orange cups.
Place one half of whole pecan on top for decoration. Bake in preheated 350 degree oven for 2o minutes to allow mixture to rise and tops to brown.
Deep fry them and sprinkle them with powder sugar! Not very creative, but something! I learned in in home ec years ago! I mean years ago!!! Good Luck, i hope you find something and WIN Dorothy
