Sweet Potato Pies





Ingredients:


2 unbaked 9-inch (2-cup volume) pie shells


2 large or 3 medium (about 1 1/2 to 2 lb. total) sweet potatoes


1/2 cup (1 stick) butter, softened


1 cup granulated sugar


2/3 cup (5 fluid-ounce can) NESTL脡庐 CARNATION庐 Evaporated Milk


2 large eggs, beaten


2 tablespoons packed brown sugar


1 teaspoon lemon juice


1 teaspoon vanilla extract


1 teaspoon ground cinnamon


1/4 teaspoon ground nutmeg


1/8 teaspoon salt


Whipped cream





Directions:


Cook sweet potatoes in boiling water for 45 to 50 minutes or until tender. Drain, cool slightly and peel.





Preheat oven to 425掳 F.





Mash warm sweet potatoes and butter in large bowl. Stir in granulated sugar, evaporated milk, eggs and brown sugar. Stir in lemon juice, vanilla extract, cinnamon, nutmeg and salt. Pour into pie shells.





Bake for 15 minutes. Reduce heat to 350掳 F; bake for 30 to 40 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Top with whipped cream. Serve immediately or refrigerate.

Sweet Potato Pie with Hazelnut Streusel Topping





Ingredients


1 pound sweet potatoes


1/4 cup butter


3/4 cup all-purpose flour


1/2 cup yellow cornmeal


1 tablespoon sugar


1/4 teaspoon salt


1/3 cup shortening


1/2 cup packed brown sugar


1 tablespoon finely shredded orange peel


1 teaspoon ground cinnamon


1/2 teaspoon ground nutmeg


1/2 teaspoon ground ginger


3 slightly beaten eggs


1 cup half-and-half or light cream


1/4 cup all-purpose flour


1/4 cup packed brown sugar


1/8 teaspoon ground cinnamon


1/8 teaspoon ground nutmeg


2 tablespoons butter


1/4 cup chopped toasted hazelnuts or almonds





Directions


Peel sweet potatoes. Cut off woody portions and ends. Cut into quarters. Cook, covered, in enough boiling salted water to cover for 25 to 35 minutes or until tender; drain and mash. (You should have 1-1/2 cups.) Cut up butter; add to hot potatoes, stirring until melted.





Meanwhile, prepare cornmeal pastry by stirring together 3/4 cup of the flour, cornmeal, sugar, and salt. Cut in 1/3 cup shortening using pastry blender, until pieces are the size of small peas. Sprinkle 3 to 5 tablespoons cold water, 1 tablespoon at a time, over mixture, tossing with a fork after each addition until all is moistened. Form into a ball.





Roll out on a lightly floured surface into a 12-inch circle; ease into a 9-inch pie plate; trim to 1/2 inch beyond edge of plate. Fold under the overhanging pastry; crimp edge high. Do not prick.





For filling, add brown sugar, orange peel, cinnamon, nutmeg, and ginger to potatoes. Stir in eggs and half-and-half or light cream. Place pastry shell on oven rack; pour in filling. Cover edges with foil. Bake in a 375 degree F oven for 30 minutes.





For Hazelnut Streusel Topping: Mix 1/4 cup flour, 1/4 cup of the brown sugar, 1/8 teaspoon cinnamon, and 1/8 teaspoon nutmeg. Cut in 2 tablespoons butter until mixture resembles coarse crumbs. Stir in hazelnuts or almonds.





Remove foil. Sprinkle with Hazelnut Streusel Topping. Bake 20 to 25 minutes more or until a knife inserted near center comes out clean. Cool. Makes 8 servings.





Make-Ahead Tip: Refrigerate prepared Cornmeal Pastry and Hazelnut Streusel Topping, covered, up to 3 days.

Prick it with a fork and throw it in a 400 degree oven for about 45 minutes. Split and top with brown sugar and butter.





Or go crazy and make this Sweet potato Casserole


4 cups mashed sweet potatoes


1/2 cup white sugar


2 tablespoons vanilla extract


4 eggs, beaten


1/2 pint heavy cream


1/4 pound butter


1 cup packed brown sugar


1/2 cup all-purpose flour


1 1/4 cups chopped pecans











Directions

Butter one 2 quart casserole dish. Preheat oven to


350 degrees F (175 degrees C).

In a mixing bowl, combine the sweet potatoes, sugar,


vanilla extract, eggs and cream. Blend well, and


spread evenly in casserole dish.

Prepare the topping by combining the butter, brown


sugar, flour and pecans. Mix until crumbly, and


sprinkle over sweet potato mixture.

Bake for 30 minutes in the preheated oven.






I LUV this one from Paula Deen...sinful! I add and additional 1 TBL bourbon or brandy during the holidays!





Old Fashioned Sweet Potato Pie Recipe

2 cups peeled, cooked sweet potatoes


1 1/4 cups sugar


1/2 stick melted butter


2 eggs


1 teaspoon vanilla extract or 1 to 2 tablespoons bourbon


1/4 teaspoon salt


1/4 teaspoon ground cinnamon


1/4 teaspoon ground ginger


1 cup milk


9-inch unbaked pie crust


3 egg whites





Preheat the oven to 350 degrees F.


For the filling, using an electric hand mixer, combine the potatoes, 1 cup of the sugar, the butter, eggs, vanilla, salt, and spices. Mix thoroughly. Add the milk and continue to mix. Pour the filling into the pie crust and bake for 35 to 45 minutes, or until a knife inserted in the center comes out clean. Place the pie on a rack and cool to room temperature before covering with meringue.





For the meringue, using an electric mixer, beat the egg whites until soft peaks form; beat in the remaining 1/4 cup sugar 1 tablespoon at a time. Continue beating until the sugar dissolves and the mixture is glossy and stiff, but not dry. With a rubber spatula, spoon the meringue onto the pie, forming peaks. Make sure the meringue touches the crust all around. Sprinkle with a pinch of granulated sugar. Bake for 10 to 12 minutes, or until delicately browned. Cool and serve.
4 large potatoes


2 cups sugar


1 stick butter


1 pinch cinnamon


1 pinch nutmeg


1 store-bought pie crust


or your can just line a pan with vanilla wafers


instead


1/2 cup milk








Boil the potatoes until tender. When you stick a


fork in them it should go in easy but you don't


want them to fall apart.





Let the potatoes cool and then peel them.





Put the potatoes in a large mixing bowl and


mash them thoroughly with a potatoe masher.


Melt the butter and pour it and the other


ingredients in the bowl of potatoes. Stir


until well mixed.





Whether you used a ready made pie crust or


just cookies, pour the potatoes mixture


into the crust.





Put into an oven preheated to 375 degrees.


Cook for about 35-40 minutes or until a toothpick


inserted in the center comes out dry.





I like to eat the pie while still hot. It's


good cold too though.





If you want you can make a meringue topping by


blending confectionary sugar with egg whites.


After the pie is almost done, spread the


meringue thinly across the top. Continue baking


until the meringue turns light brown. If you


use the meiangue, you can add the egg yokes


to the pie if you like. I prefer my pie


without eggs, so I just save the yokes for breakfast



Here's a recipe for sweet potato pie from 1922





Cook 6 large sweet potatoes with a little salt





When cooked, remove from fire, peel and mash smooth.





In a separate dish, beat three eggs ~ add to the eggs, three tablespoons corn starch and a quart of good rich milk and a piece of butter the size of a walnut.





Mix well with the mashed potatoes and put in crust and bake.





A meriungue may be added if desired.
