Anyone got any nice recipes involving sweet potato?

Well my parents are korean and what they do in korean is you put the whole sweet potato into really hot fire (without washing or boiling the sweet potato) until it cooks





then you take off the outer burnt skin and eat the inside (careful its really hot) and its the most nicest thing ever








otherwise heres a recipe i found xD:











SCALLOPED SWEET POTATO CASSEROLE





6 medium sweet potatoes


2 medium onions


2 tablespoons vegetable oil


salt


2 tablespoons butter


2 tablespoons all-purpose flour


3/4 teaspoon ground ginger


1/4 teaspoon pepper


2 cups milk


2 tablespoons chopped parsley





In 5-quart saucepot over high heat, heat unpeeled sweet potatoes and enough water to over to boiling. Reduce heat to low; cover and simmer until sweet potatoes are just fork-tender but not soft, about 20 minutes; drain. Cool sweet potatoes until easy to handle.





Meanwhile, slice onions 1/4 inch thick. In 12-inch skillet over medium-high heat, in hot vegetable oil, cook onions and 1/4 teaspoon salt until tender, stirring occasionally.





Preheat oven to 375掳F. Grease 13'; by 9'; baking dish. Peel sweet potatoes and cut into 1/4-inch thick slices. In bottom of baking dish, arrange one-third of sweet potatoes; sprinkle with half of onions. Place half of remaining sweet potatoes over onion layer, then top with remaining onions.





Arrange remaining sweet potatoes over onions.





In 1-quart saucepan over medium heat, melt butter; stir in flour, ginger, pepper, and 1 teaspoon salt until blended; cook 1 minute.





Gradually stir in milk; cook, stirring constantly, until sauce boils and thickens slightly.





Pour sauce over potatoes in baking dish; sprinkle with parsley. Bake 30 minutes or until sauce is bubbly and mixture is heated through. If you like, broil 1 minute to brown top of potatoes slightly. Makes 6 accompaniment servings.

Peel it, chop into chunks and toss them in a little olive oil and herbs..dried will do. or, if you have it on hand, a teaspoon of pesto mixed with the same amount of olive oil. Place them in a roasting dish and roast at 180 degrees for 30 minutes or until caramelised on the outside and soft inside. These are delicious as a substitute for potatoes or served with the usual trimmings of a roast dinner, including potatoes and gravy.


Or..cut the sweet potatoes into chips and fry them for about half the time of ordinary potatoes, delicious on their own or mixed with ordinary potato chips..and with salt and vinegar or lemon juice if you like your chips that way.


Finally, cut them into long thin slices, brush with a little oil and a pinch of black pepper, then roast them on a baking tray..twenty-thirty minutes..and layer them on top of a casserole or next to stew.


Sweet potatoes are better for you than ordinary ones, so substituting them for at least some of the potatoes you would use is a great idea..some people like them steamed and mashed, not my own cup of tea but there it is..and they always go wonderfully with a cheese or a tomato sauce, fish, pork, gammon, chicken or simply a pile of mixed Mediterranean vegetables chopped up and roasted with them , that is..tomatoes,peppers, courgettes, onions, garlic, aubergine and so on.Anyone got any nice recipes involving sweet potato?
Maple Mustard Sweet Potatoes and Apples





3 large sweet potatoes


3 large Idared, Northern Spy or McIntosh apples


2 Tbsp butter


1/2 Cup maple syrup


1/4 cup Dijon mustard


1/2 tsp each salt and papper


2 cloves garlic, minced





Cook unpeeled sweet potatoes until just tender. Cool and peel. Cut into 1/4 inch thick slices, arrange in overlapping circles in shallow lightly greased 10 cup (2.5 L) casserole dish.





Core and slice apples into 1/2 inch wedges. In large skillet, melt butter over medium heat; cook apples, stirring, for 2-3 minutes until slightly softened and lightly browned. Tuck among potatoes.





Combine maple syrup, mustard, salt, pepper and garlic. Pour over potatoes and apples. Can be prepared to this point, covered and refrigerated for up to 1 day. Bake in 350 F oven for 30-40 minutes or until bubbling and hot. Spoon sauce over potatoes to serve.

try sweet potato chips and spicy tuna with salad or cube it really small and make a mushroom, potato bacon and pasta salad but make it herby and tart

i like to bake them and put a nice bouillon with them to simmer.
