They're delicious roasted together with roasted vegetables and pork - for eg: pumpkin, carrots. All the remains in the pan form the base for the most delicious gravy as well. Remember to pre boil the sweet potatos before roasting them.
Another good option is to start by pre boiling your potaos and just when they are under done slice them about an inch or two thick in a baking dish, pour on some thick cream or creme freche, grate some cheddar cheese, season with sea salt, black pepper, then whack in the oven until cooked. It's good with steak or pork chops, even sausages.Do you know any nice recipes with sweet potato?

Serves: 6
Recipe Ingredients
1 large sweet potato, peeled and chopped into chunks;
600g squash (either butternut or pumpkin) peeled and chopped into chunks;
1 large onion finely chopped;
1 1/2 litres hot vegetable stock;
50g butter;
1 tsp ground coriander;
200g creme fraiche
Recipe Method
Melt the butter in a saucepan and gently fry the onion until soft. Add the coriander and cook for a further minute.
Add the squash, sweet potato and stock. Bring to the boil and season to taste. Simmer gently for about 25 minutes until the chunks of squash and sweet potato are tender.
Blend the soup in a food precessor until smooth. Return to the pan and add two thirds of the creme fraiche and stir through, until soup is hot. Serve with the remaining creme fraiche swirled on top.
Sweet Potato Stew
1 onion, peeled and chopped
4 tablespoons groundnut oil
2 garlic cloves, peeled and crushed
2 teaspoon grated fresh root ginger
1/2 teaspoon cayenne pepper
350 g sweet potatoes, peeled and cut into cubes
1 tablespoons mild or medium curry paste
1/2 pint passata
1/2 pint vegetable stock
225 g spinach leaves, trimmed, roughly shredded
225 g mushrooms, cut into halves or quarter if large
4 tablepsoons peanut butter
2 tablespoons chopped fresh coriander
Salt and pepper
Coriander sprigs to garnish
Heat 3/4 of the oil in a saucepan, add the onions, garlic, ginger and cayenne and fry gently for 10 minutes. Add the curry paste to the onion mixture and cook, stirring, for 1 minute. Add the sweet potatoes, stir to coat evenly in the mixture. Fry for about 3-4 minutes. Add the passata and stock. Bring to the boil, cover and simmer for 15-20 minutes until the potatoes start to become tender. Heat the remaining oil in a fry pan, add the mushroom and stir-fry until they soften. Add the potatoes and the spinach and cool for another 5 minutes or until the vegetables are cooked through. Mix a few spoonfuls of the stews juices with the peanut butter to soften it slightly, then stir into the pan. Add the coriander, season with salt and pepper to taste and heat through. Serve garnished with coriander sprigs, with rice.
I made these earlier in the week with some grilled chicken...the family ate them up!
Parmesan Rosemary Sweet Potato Fries
serves 4
About 1 1/2 lb sweet potatoes
1/4 cup olive oil
sea salt
2 tbsp chopped fresh rosemary
1/2 cup freshly grated Parmesan
Preheat oven to 400 degrees. Line a baking sheet with aluminum foil (preferably the easy release kind).
Peel the sweet potatoes. Cut into strips that are about 1/4 inch wide on each side.
Place the sweet potatoes into a large bowl. Add oil, salt, and rosemary. Stir well to thoroughly coat the fries. Stir in 2/3 of the Parmesan. Spread out onto the baking sheet in a single layer. Sprinkle with remaining Parmesan.
Cook for 20-25 minutes, turning about halfway through. Fries are done when they are browned around the edges. Transfer immediately to a paper towel lined plate and serve warm.

Praline Sweet Potatoes
2 medium sweet
potatoes, cooked
and peeled
陆 cup low-fat milk
1/3 cup sugar
2 eggs
2 tablespoons butter
or margarine
陆 teaspoon nutmeg
1/2 teaspoon cinnamon
Crunchy Praline Topping
2 tablespoons butter
. or margarine, melted
戮 cup com flakes
录 cup chopped
walnuts or pecans I 录 cup firmly packed
brown sugar
Place potatoes in mixer bowl. Attach bowl and
flat beater to mixer. Turn to Speed 2 and mix
about 30 seconds. Add milk, sugar, eggs,
2 tablespoons butter, nutmeg, and cinnamon.
Turn to Speed 4 and beat about 1 minute. Fill small rameikins that have been sprayed with cooking spray about 戮 full.
. Bake at 400掳Ffor 20 minutes, or until set. It will puff up %26amp; start to brown %26amp; feel firm to touch. Clean bowl %26amp; beaters.
Place all Topping ingredients in mixer bowl. Attach bowl and flat beater to mixer. Turn to STIR Speed and mix about 15 seconds. Spread on hot puff. Bake 10 minutes longer.
Yield: 6 servings ('/4 cup per serving).
Per serving: About 268 cal, 6 g pro, 35 g carb, 12 g fat, 2 mg chol, 176 mg sod.
Boil some peeled sweet potatoe in salted water until soft.
Drain the potatoes, and but in a big bowl or re-use the one you boiled in.
mash it with butter, milk, salt and pepper.
place some on a plate, and put a pan fried chicken fillet on top and serve with buttered spinach and a creamy cheese sauce.

My favorite recipe for Sweet Potatoes is Fries. Yep.
Cut your French Fries. Coat lightly in Olive Oil (very little is needed).
Lay single file on a cookie sheet and sprinkle lightly with Thyme.
Bake at 450 degrees for 45 minutes.
Sprinkle with Sea Salt
Our favorite is so simple. We just bake it as we would a baking potato either in the oven or microwave, split down the middle and top with a mixture of soft butter, brown sugar and cinnamin! Delish!
Sweet potato wedges (easy)
-Sweet potatoes
-Olive Oil
-Salt
-Pepper
Peel and wash the potatoes..
cut them into wedges and rub all over with oil salt and pepper..
bake in oven for 20-30 mins at 190 degrees..
i make them candied sweet potato
cut them into 2' pieces
add
1/2 c brown sugar
10 marshmallows
and cook tell soft
my mom add them with mashed potatoes

Cut up to make fries
Lay out on a cookie sheet. Coat with about 1 tablespoon olive oil and about 1 tablespoon brown sugar. Bake at 350 for 1/2 hour or until sweet potatoes are tender. salt and pepper
